Yummy vegetarian comfort food?!


Question: Yummy vegetarian comfort food!?
So tomorrow I am having what I like to call an introverted day (although, being an introvert, I suppose all my days could be called that, anyway)!. What are some good food I could cook/eat that won't take too long and will taste delicious and maybe a bit luxurious!? I need it to fit with my schedule of a hot bubble bath, lots of magazines/good book, and lounging around :)Www@FoodAQ@Com

Well, my favorite comfort foods are vegetarian double chili mac (I make boxed Mac N Cheese, but use double the seasoning packet- I swipe it from another box- and use butter instead of margarine and half and half instead of regular milk then add a can of Nalley Vegetarian chili) and faux pho!. I use the Taste of Thai noodle soup packets and toss in some veggies and extra water!. I like fresh or frozen stir fry mix!. If I had it, I'd also use a little bit of delicious cilantro, jalapeno, and lime juice!. Mmmm!.

There's a really simple italian dish a co-worker taught me:
- cook a cup of macaroni noodles with a half-cup of peas and drain them
- add 2/3 cup of ricotta cheese and 1/4 cup grated parmesan, a pinch of salt and some fresh-cracked pepper, and mix it all together
It's like a low fat, healthy, classed-up macaroni and cheese!.

If you have rice paper rolls, I love them stuffed with a little tofu, mango, red bell pepper strips, and cilantro, then dipped into peanut sauce - either jarred, or made with peanut butter, chili paste/sauce, lemon juice, soy sauce, and brown sugar to taste!.

Another thing I like is trifle, if you have leftover cake or ladyfingers, layer them in a martini glass or glass bowl with jelly or fruit, custard/pudding, a little sherry or liqueur (optional!) and whipped cream on top!. Www@FoodAQ@Com
