Any suggestions for a vegan main course at Thanksgiving?!
I'll be the only vegan dining with my (extended) family of about eight, and I'm looking for a recipe for a good main course I can make and bring!. I'd prefer not to do the fake turkey thing!.
I need specific recipes, either posted in the answer, or linked in the answer!. I know a bunch of vegan recipe sites already, so just directing me to one of them and telling me to search for something there isn't what I need!.

Enjoy the wholesome goodness of my world famous Thanksgiving carrots:
Ingredients:
2 pounds wholesome carrots, sliced
1 cup onion, chopped
1 cup cheddar cheese, grated (vegan version)
1 cup mayonnaise (vegan version)
1/2 cup sugar
1/4 tsp!.salt
Dash of pepper
1 cup cracker crumbs
Directions:
Cook sliced wholesome carrots an onion together in small amount of water, drain!. Mix carrots and onion, cheese, mayonnaise, sugar, salt, and pepper together!. Pour into buttered 9x13x2-inch baking dish!. Top with cracker crumbs!.
Bake at 350 degrees for 20 to 25 minutes or until hot and cheese is melted!.

This is the only challenging part (other than the logistics of cooking a zillion dishes at one time)!. You have several options, starting with making something yourself, or buying the health food store staple - tofurkey (which I have never personally tried)!. If you choose to make something yourself, try any one of the following, including gravy of course:
Seitan Stuffed Squash - make 1/2 squash per person (or 1 squash per every two people)!. Acorn squash is the best choice - it's the perfect size for a main dish, and holds up much better than the delicata when lack of attention (ahem, busy-ness) is involved!.
Southern Baked Tofu - this is probably my favorite time to have this dish!. Fairly easy to make, just takes some assembly time!. I'll try and get the quantities nailed down before Thanksgiving, so hang on!

If you are looking for a centerpiece of your meal, something to replace the turkey, you can stuff a pumpkin!. I have seen this done numerous times, and it tastes fantastic!.

Stuffed peppers are good!. Cut the tops off, fill them with rice and veggies, or whatever you want, and put em in the oven!.

I have 2:
Stuffed Turban squash: (looks great on the table)
Cut off topknot of squash and clean out seeds, strings, etc!.
Steam both sections for about a half hour(can be done ahead)
Prepare any stuffing you like (can be wild rice, seasoned bread ala Mrs!. Cubbisons or whatever!.
I use Mrs!. C's and add in toasted walnuts, onion, diced apple and mushrooms to the basic mix, amts are on the box!.
On T-Day, lightly oil inside of squash, season with salt and pepper and stuff cavity with your stuffing!. Bake at 350 degrees until stuffing and squash are heated through and squash is softened (so that you can cut into it or cut slices to serve with the stuffing!. This recipe is my own!.

No turkey tofu I promise!. =)
This recipe does include tofu, but in no sense of changing it into any type of artificial meat!. I've had this before and it's so good, trust me!.
I buy firm or extra firm tofu, I put some weight on it when I get home to take most of the moisture out of it and let it sit in the fridge for a half a day!. Once I have a pretty solid square of tofu, I slice it sideways to make quarter inch (or less) rectangles!.
I put the rectangle into a gallon bag and add soysauce and some type of hot oil, but you can add whatever you like!. I use Mongolian fire oil!.
I let the tofu marinate in the sauce for a few hours, just to let the tofu absorb some of the liquid!.
After that you might opt for cooking some rice!. I personally like the tofu by itself, but you could try either way!.
So now, once the tofu has absorb the liquid, I heat up a pan full of vegetable oil, not to much, just enough to cover half of the piece of tofu!. I let it brown on both sides, and then cool them on a plate after they are done!.
You can now eat the tofu by itself, or add it to the rice if you like!. You can also make a really delicious stir fry, with carrot, mushrooms, peas, peppers and broccoli!. You can find a great mixed bag in the frozen food section of almost every grocery store!.
I know this isn't a very traditional dish to serve on Thanksgiving, but if I would have suggested vegetarian lasagna, it would still have cheese in it, but I hope you might try this sometime, even if it isn't for Thanksgiving!.Www@FoodAQ@Com
