Ok so your trying to be a vegan right!? You can make your own meat substitute by mixing equal quantities gluten flour and liquid, knead till stiff then let rest!. slice into schnitzels, nuggets whatever, then poach in veggie stock!.

A nice recipe is
2cups gluten flour,
1cup vege stock
1/4cup soy sauce
1/4cup vegetarian mushroom soy/vegetarian oyster sauce
1/2 cup tomato sauce!.
Knead well together untill tough, cover with a cloth, rest until soft, mould how you wish and poach/boil in vegie stock for 25minutes!.

You can then crumb, stirfry, stew, the fake meat however you wish!.

If you wish to crumb without using egg!.

Dust fake meat with seasoned flour, then dip in a cornflour and water mixture, then dust with breadcrumbs!. Bake or fry!.
Hope have been of some help!.Www@FoodAQ@Com

Use the classic breading technique with a few simple changes and it should work!. First, make sure the cutlet is damp(dip into soy milk!.) and dip into seasoned flour, then dampen it again(soy milk could work, just not vanilla flavored!) then dip into finely ground bread crumbs or cracker crumbs!. Could also use finely ground potato chips as it would not have milk or egg in it as bread or cracker meal might!. Fry lightly in oil of choice, and don't turn so often since you are not using a binding agent like egg!. It should work!. If you keep playing with it while it is frying, the breading may come off!. Medium heat and peek under the cutlet before flipping it over and I would only turn it once!.
If you do use the potato chip thing, be careful not to over salt the seasoned flour part!.Www@FoodAQ@Com

it would work best if used a binding agent, like egg however I don't think vegetariens eat eggs!.!.!.!.but I also didn't think they ate chicken!.!.!.!.confused!.!.!.anyway

Dip the meat in the milk, coat in breadcrumbs and repeat, that will give you the best coverage!.
Then just fry it in oil, but make sure its not too hot!.Www@FoodAQ@Com
