Question: Do you have a good recipe for a vegan birthday cake!?
It's for my daughter's 2nd birthday!.
Something not too complicated would be good!.

One thing I need to mention, is that I can't find silken tofu where I live, and she doesn't eat chocolate!.

In many recipes, you can use soy milk in place of cows' milk, and Ener-G Egg Replacer in place of eggs!. If you can find flax seeds, use 1 tbsp ground flax seeds and 2 tbsp water per egg!. Silken tofu is usually found on the shelves, as it need not be refrigerated!. Some people use applesauce in place of eggs, but I don't like it much!.

Vegan Eggless Applesauce Spice Cake
When you have a craving for something sweet, something quick and delicious, try this exceptional moist eggless applesauce spice cake!. It will turn your vegetarian kitchen into a wonderfully fragrant and happy place as it bakes, and your friends will not believe that it is an egg free treat!.
Preheat oven to 350o!. Prepare pans with Baker’s Joy; or line the pans with parchment or waxed paper cut to fit the pan lightly spray with Canola Oil Spray and a light dusting of flour!.
Ingredients:
1/2 Cup Earth Balance Margarine at room temperature
3/4 Cup Agave
1 Cup Applesauce
2 tsp!. Cinnamon
1/2 tsp each Nutmeg, Allspice, Ginger
1 3/4 Cup Unbleached Whole Wheat Flour
1/2 tsp!. Sea Salt
1 tsp Baking Soda
1 tsp Baking Powder

Method:
Sift dry ingredients together!. Cream Earth Balance and Agave together!. Alternately add dry ingredients and applesauce to the mixture!. Mix well!. Pour into the prepared cake pan!.
Bake 30 - 45 minutes until an inserted toothpick comes out clean, the cake pulls away from the edges of the pan, and is springy to the touch!. Remove to a wire rack!. Allow to cool for ten minutes before turning out on to the rack to finish cooling!. This cake really likes a lemony frosting!.

Prep Time: 10 minutes
Cook Time: 50 minutes

Ingredients:
2 cups flour
1 cup sugar
1 tbsp cornstarch
2 tsp baking soda
1/4 tsp salt
1/3 cup cocoa
1 1/2 cups applesauce

Preparation:
Pre-heat oven to 325 degrees!. Grease and flour a bundt cake pan!. Note: You can use other cake pans, but because this cake is a bit heavy, layered cake pans are not recommended!.

Mix all of the dry ingredients together in a large bowl!.

Add applesauce and mix well until batter is smooth!.

Bake for 50-55 minutes, until done!. You can always tell that a cake is finished baking by sticking a toothpick in the center of the cake!. If the toothpick comes out clean, that is, not covered in batter, then your cakes is done baking!.

Frost, if desired, and enjoy!

Ok, the duncan hines brand cake mixed are vegan!. If you can get rice milk or soy milk and some egg replacer your set! All of those things can be purchased at whole foods along with a vegan icing, I personally love the pills berry icing, and yes, its vegan!!Www@FoodAQ@Com
