Mexican dish for party. - vegetarian only?!
I need a a good, simple, and cheap Mexican dish - not chips and salsa - to take to my bosses pot luck dinner!. Any ideas!?

You said not chips and salsa…but what about nachos!?
You can make it with: Chips, cheese (not vegan), onions, green peppers, and “soy beef” (fake meat meant to mimic ground beef)!. The soy beef is usually prepared with taco seasoning, and doesn’t taste any different (especially with the other ingredients all mixed in) than real beef!.
Some special notes:
- The fake beef that I used to use looks and tastes so much like real beef, that I recommend you keep the packaging and take it with you to the party!. Otherwise people may accuse you of actually using real beef and saying it’s fake!
- Too much soy is not good for you!. If people are just munching on a few bites of this, it’s shouldn’t be a big deal!. But eating meals of soy on a regular basis is not healthy!.
- The same fake beef could be used for tacos too!.

1/2 package of "Burger" crumbles
1 package taco seasoning
water
1 15-oz can corn
1 small can tomato sauce
tortilla chips
1 15-oz can of beans (refried or black)
1/2 onion diced
non-stick cooking spray
2 cups grated cheese
Directions:
Spray pan with non stick spray!. Warm the meat substitute a few minutes!. Put in onion and taco seasoning, using the amount of water called for on the taco seasoning package!. Cook for a few minutes, add tomato sauce and corn!. Cook a few more minutes!.
Put chips on bottom of a deep 9 inch casserole dish!. Pour mixture over chips, then cheese, then more chips, mixture, cheese!. The mixture should be the last layer on the casserole!. Then put a layer of beans and more cheese!.
Bake at 350 degrees for 15-20 minutes until hot!.

This is actually a Weight Watcher recipe, but it is so good! You can make it less healthy by using white rice and full fat cheese and sour cream if you wish :) I also substitute the regular frozen corn for the frozen roasted corn that they sell at Trader Joe's, so if you have a TJ's near you, it's well worth the swap!
Tex Mex Rice and Bean Casserole

1 tbsp canned green chili peppers, chopped, mild or hot
15 oz canned pinto beans, drained and rinsed

Spoon mixture into prepared baking dish and bake for 30 minutes!. Remove from oven and sprinkle with remaining 2 tablespoons of cheese!. Return to oven and bake until cheese melts and casserole is slightly bubbly, about 10 minutes more!. Let stand for 5 minutes to firm up before slicing into 6 pieces!. Yields 1 piece per serving!. 1/2 cup sliced green onions (8 medium)
1/4 cup chopped fresh cilantro
Dressing
3 tablespoons white wine vinegar or cider vinegar
3 tablespoons canola oil
1 tablespoon chili powder

1!. In large bowl, mix salad ingredients!. In small bowl, mix dressing ingredients with wire whisk until blended!.

Fahita's!? Use onion, garlic, red and yellow peppers and oyster mushrooms as the filling and add veg oil, and chilli and cumin powder! Mmmm, now I'm hungry! :) Include grated cheese, soured cream and salsa so people can add it to their fahita's if they wish!.
