I like to use a banana!.
I read on vegan!.org it says one banana per egg!.
But i used 1/2 of a large banana per egg and it came out good, a little moist!.
so
1 egg = 1/2 banana
3 eggs = 1 1/2 banana
works well in chocolate cakes!. however!. if you are not makign a cake a banana may make whatever youre making taste weird!. lolWww@FoodAQ@Com

Half a banana or a quarter cup of applesauce works!. The only thing you have to be careful of is the fact that eggs help with levening so anything you make will be more dense!. If there isn't any baking soda or powder you might want to add an eighth of a teaspoon per egg too (if you're making cake, brownies, etc)Www@FoodAQ@Com
