The second girl is right and the closest, it is soyabeans ground into a mash and cooked then the "Milk and "Proteins are released, it is then set with a calcium based coagulant, which resembles the cheese making process, and she is right it is made into many forms,, from the softest "silken to the firmest "extra firm", correct it is very neutral in flavour, but that allows you to flavour it in your own manner, there are now flavoured types with sun dried tomato's, basil and asian spices, they fry it in ball or block form for different dishes, I buy a brand here in Canada flavour with almond, mango, coconut and berry's flavours in a soft sweetened desert form, I also use it for an Indian dish called "Paneer", normally made with a firm non melting cheese, I use it and have fooled Indian friends with it, I use the extra firm with spinach, chili sauce or a creamy sauce made with soya milk!.Www@FoodAQ@Com
Tofu is made from ground, texturized soy beans!. It can be found from soft (silken) to extra firm!. Based on what you're going to do with it, you'll usually end up buying the silken (use in smoothies, as an egg substitute, and a subsitute for cheese in some recipes, like cheesecake) or extra firm (for stir frying or sauteeing)!.
Tofu itself has no flavor!. It takes on the flavor of whatever you add to it, making it very versatile!.
