What vegetables have a meaty texture?!

Question: What vegetables have a meaty texture!?
Hi all, i am in the process of becoming a vegan but am concerned for my partner because it is getting to the point where i am unable to touch meat and am quite happy not to eat it myself but it seems unfair on him so i am looking for vegetables that have a meaty like texture to the bite, i heard that eggplant has this but am not sure of any others if any, can some one please help!.Www@FoodAQ@Com

You can always just add bits of seitan or tofu as a 'meaty' additive, or nuts, as in a nut roast!.

I'd second lentils, beans, and mushrooms - especially portobellos and dried mushrooms!.

I'd say you can also try Jackfruit!. It's become de rigueur in the vegan gourmet community as of late:

Dried beans like pintos, navy, white beans and garbanzos or a legume such as lentils!. Packed with protein and fiber!. Have some cheeses on hand to get that mouth feel that fat brings to the plate!. Packed with fiber and protein though not strictly a veggie they are from a plant source!. Soy based proteins like tempeh, T!.V!.P!. textured vegetable protein are good alternatives!. Avocadi is good for the fat content and mushroom do have a meaty texture profile though they are fungus!. Www@FoodAQ@Com

none! not even eggplant!. those are two entirely different things!.
how is the fact that you're becoming vegan change your partner's life anyway!? are you going to deny him meat because you've made that choice for yourself!? if you can't touch meat, he can cook his own!.Www@FoodAQ@Com

It's tough to find a meat texture with vegetables but I think eggplant is the closest!. Mushrooms have a meatier texture than eggplant does, but mushrooms aren't vegetables!.Www@FoodAQ@Com

cauliflower is wonderful substitute in chili, I like mushrooms too!. Be careful about over cooking the eggplant it can get soggy!. Www@FoodAQ@Com

Many types of beans do, as well as portabello mushrooms (very yummy when grilled) and you can always try different substitutes like tofu!.Www@FoodAQ@Com
