Question: Delicious veggie dish for a first timer!?
My boyfriend is a self proclaimed meatitarian lol He has never had a vegetarian (let alone vegan) dish in his life!.!.!.I want to make something really special for his first vegetarian dish!.!.!.What are some suggestions!? He loves Chicken Parmesan, I was going to do a eggplant parm, any good recipes out there!? I want to do an italian dish because I think it would be less of a shock to his system lol He is super scared to try tofu/soy products!.!.!.lol

I would make pasta!.
fry aubergine, courgette, red and white onion, garlic, yellow peppers in olive oil, then add a bit of red wine!. once the veg is soft and simmered for a while put it in a blender and make into puree!.
while the veg is simmering boil some pasta(unless you got fresh) for non veggies I always use a large pasta like fusilli or large shells!.
once its all cooked mix together in a ovenwear pot and put in the oven with mascapone cheese, then put it on very low heat in the oven!. ignore for an hour while you and your boyfriend have a glass of wine and some ciabbia with olive oil, balsamic vinegar, and a sweet chilli and garlic dips!.
serve your pasta with salad and the dips and bread left from the starter, he can then try various flavours with the pasta, and for your final touch get some fresh grated parmesan, use a little in your pasta bake, but put fresh on the table with the whole creation, knowing blokes he'll chuck all the parmesan over it (mine does) and enjoy the meal!.
theres not much to wash up after and hopefully you'll have a lovely night!.

If you want to try an Italian dish, give this a shot!.

Bread and fry eggplant like you would with chicken parm!. Cook pasta, then serve with halved cherry or grape tomatoes, olive oil, fresh chopped basil, and parmesean and/or fontina cheese!. A great starter is tomato mozzarella basil salad, which is just fresh torn basil, sliced mozzarella, and fresh sliced tomato with a little olive oil, balsamic vinegar, and salt and pepper to taste!. This is a great appetizer, but I would not serve it with the meal I listed because it can be a bit overwhelming with the fried eggplant!. I would do 1-2 slices of the fried eggplant since having more will get a bit heavy and greasy!. You can always still serve fresh garlic bread as well!.

Both dishes are very easy to prepare and are made with ingredients found in any grocery store!. Enjoy!Www@FoodAQ@Com

I was scared too, but I dove in head first as a Vegan just last week!. If anything, it's good to be open minded and giving something new a try!. The food is (surprisingly) so good that I don't even want to go back to animal by-products (not just for food reasons; it's just not fair to animals!.)

My girlfriend made some delicious foods from the Skinny Bltch book!. I highly suggest checking this book out, not only for the recipes but also for an eye-opening look into the meat industry and government!.

Oh, and give fake meat a try! I had to when my dad went Vegetarian back in like 1997 and the fake meat was absolutely TERRIBLE!. I tried it again last week, and damned if it doesn't taste BETTER than the "real thing"!. My favorite brand is Morning Star!.Www@FoodAQ@Com

You should try some spinach lasagna!. When I was a vegetarian I used to love to make this!. There was a lot left over too!

If he is okay with the spinach, I'm sure he'll love the rest!. The recipe I have is full of ricotta, parmesan, and mozzarella cheeses!. It's so dense, he won't miss the meat!
