The obvious choice would be a "Veggie Burrito"!. I would first saute your favorite veggies, I like to use zucchini, onions, mushrooms, tomatoes, spinach, and a little garlic, salt & pepper!. Warm your tortilla's according to their package instructions to make them pliable!.!. then spoon your filling onto about 1/3 of your "tort" and ROLL!. You can melt cheese on top if you like, or add a sauce - I prefer the tomatillo/verde salsa's!. Or, you can serve it on the side for individuals personal choice!. Black beans, and pinto beans are GREAT accompaniments!.

You could take the similiar idea with the veggie mixture to fill a "quesadilla", or another option which is a little more work would be to deep fry!.

Chimichanga's are basically a deep fried "burrito"!. You might also think about making it into a "taco salad" bowl!. This can be done using your fryer, OR baked in the oven!.

make sweet potato and black bean enchiladas:

2 sweet potatoes (peeled and diced)
1 tblspoon olive oil
1 minced garlic clove
1 minced hot chile
1 15 ounce can black beans (rinsed)
1 14!.5 ounce can diced tomatoes (drained)
1 tblspoon chili powder
salt and pepper
2 cups salsa
8 tortillas
1/4 cup chopped red onion

preheat oven to 400!. roast sweet potatoes until tender!. Reduce oven to 350!. Heat olive oil in skillet and add garlic and chile!. cook until fragrant!. add beans, tomatoes, chili powder, and salt and pepper!. Stir in potatoes and simmer 5 minutes!.
Spread thin layer of salsa in oiled baking dish!. Spoon some sweet potato mixture in a tortilla, roll it up and put in baking dish!. spoon any remaining mixture on top of tortillas and top with more salsa!. Sprinkle with the onion!. cover and bake until bubbly, about 20 mins!.

You might want to enjoy the wholesome goodness of my world famous carrot and bean burritos:

4 med wholesome carrots
1 clove garlic
1 teaspoon extra virgin olive oil
1 14 oz can black beans
1 10 oz can Rotel tomatoes and green chilis
1/2 cup red wine
1 teaspoon cumin
1 teaspoon savory

Directions:

Saute wholesome carrots and garlic in olive oil!. and vegan wine then rotel tomatoes (juice and all)!. Simmer for 5 minutes!. Add beans (juice and all) and spices, simmer until thick!. Use as filler in tacos, burritos, or anything you want!.

Tofu Sisig
good for 3 servings
Ingredients
1 pack tofu
4 spoons soy sauces
1 cup chopped tomato
1 spoon brown sugar(optional)
1 stalk chopped celery(optional)
1 can mushroom with the brine
2 cloves onion chopped
1/2 cup onion copped
oil for sauteing
MSG(optional)
4 cups chopped cabbage(optional)
lemons(optional)
and some chili(optional)

Procedure

1!. Divide the whole tofu into 4 blocks and every blocks should be sliced thin and horizontaly!.
2!. deep fry them and let them cool!.
3!. cut them into juliens or dice!.
4!. saute garlic and onions for 1 minute!.
5!. Add the tomatoes, soy sauce ,mushroom brine and chopped celery!.
6!. chop the mushrooms!.
7!. add the tofu and add 1 cup of water and simmer!.
8!. add the mushrooms and brown sugar and the MSG(optional)!.
9!. put it on a serving plate and serve with copped parsley or the chopped celery leftovers!.
10!. If you have guess, serve some a whole Chili and Lemon on a plater

You can crisp them up in the oven, then layer tortillas, beans, cheese, tomatoes, onions, garlic, fresh cilantro, cooked rice to make a Mexican lasagna!. Top with cheese, bake at 350 degrees for about 20 minutes!. Www@FoodAQ@Com

cubed tomatoes raw
sliced avocado
chopped yellow Chili peppers
chopped bell peppers - yellow, orange and red raw
sun-dried tomato and basil flavored feta cheese
ranch dressing

Cook up a can of nutmeat!.
Add taco seasoning to the nutmeat!.
Put the nutmeat on the tortillas with sour cream, lettuce and tomatos!.

I use beans instead of meat ,still use the same seasoning but in beans then add your sauce and sour cream and lettuce tomato's ext!.Www@FoodAQ@Com
