Does freezing vegetables affect their nutritional value?!


Question: Does freezing vegetables affect their nutritional value!?

I try to buy fresh organic vegetibles as often as possible but with the higher costs of everything I've been storing large family size veggies that are packaged & frozen!. (I wont do cans b/c of all the salt )

Anyway I was just wondering what, if any,impact freezing veggies has on it's nutritional value!. also, the nutritional values on the back of the bag-are they calculated before or after freezing!?

Studies have shown the freezing fruits and vegetables while they are still very fresh can actually retain their nutritional value!. I'd bet that the nutritional value on the bag won't vary much, if any, from fresh to frozen!. Where you're going to loose things like vitamin content is through cooking!. Www@FoodAQ@Com

Of course!. If you just pick something from a tree, it will start to lose what it originally had!.

Freezing is ok!. MUCH better than cooking!. But there will be minimal losses!.Www@FoodAQ@Com
