Vegan quick meals and travel snacks?!


Question: Vegan quick meals and travel snacks!?
I'm a strict vegan so no animal products, by products including no dairy or eggs ever and no enriched products!. I need help with tips for quick and easy to make meals and also snacks you can make that keep well for travel and such so any tips would be great!. Thanks!.Www@FoodAQ@Com

dried fruit
veggie chips
fresh fruit/vegetables
granola
vegan chocolate
Luna bars
soy protein shakes
homemade vegan cookies
whole-grain pretzels

I used to be Vegan until I started Culinary school!.
They have these delicious Apple Cinnamon Rice Cakes by a company called Hain!.
I used to make them a lot, but they are granola bars, the recipe is:
* 2 cups vegan rice crispies
* 2 cups dry oatmeal
* 1 cup cranberries, raisins, or any other chopped dehydrated fruit
* 1/2 cup hulled unsalted sunflower seeds
* 1/2 cup chopped almonds
* 1 cup light vegan corn syrup (I think corn syrup is vegan anyhow)
* 3/4 cup sugar
* 1 tablespoon non-hydrogenated vegan margarine
Mix sugar and corn syrup in a sauce pot and heat until all the sugar is dissolved!. Mix the remaining ingredients into the sugar/corn syrup mixture!. Make sure all your dry ingredients are coated!.
Add this into a greased pan, and spread out evenly!. Place a wax paper over your granola and press down evenly!. Let sit for an hour!. Then you can cut it into easily packable sizes to take with you!.

Nuts are really easy as well, you can buy plain unsalted nuts of your choice and season them to your liking!. You can candy them, by making a simple caramel!. You can do a balsamic sugar coating on them as well, or one of my favorites is a chipotle spice on the nuts!.

Hummus is delicious on a whole wheat pita!.
Fresh fruit, veggies!
I'm a sucker for avocados, I love slicing up cucumbers and avocados and putting my favorite Italian dressing over them, mine being Bernstein family style recipe Italian!. This may be a little messier, but just bring some tupper wear!.

For a quick meal, you could make falafel and hummus sandwiches, beans and rice, burritos (with TVP or tempeh) pasta with sauce!.

For snacks, you could have veggies and hummus or other dip, sliced apples with peanut butter, nuts, granola, nut thins (available in the health foods section at the grocery store), soy cheese, soy milk, chips and salsaWww@FoodAQ@Com

Nuts especially peanuts and almonds!. Popcorn!. Raisins!. Dates and dried figs!. Chunks of soy cheese (my favorite is jalapeno soy cheese) My health food stores sells all kinds of snacks like veggie chips that taste much like potato chips!. Homemade biscuits with raisins!. Quick Meal: Beans and Rice

Snack: Assorted vegetable chips, sun dried peas, peanuts, oatmeal cookies, mini carrots, sun flower seeds, pumpkin seeds, granola bars!.Www@FoodAQ@Com

A snack I like is to mix 1/3 cup of mixed nuts with 1 TBSP of chocolate (you can use carob to be vegan) chips and 1/4 cup of raisins!. Www@FoodAQ@Com
