Chow Mein - Fried Noodles & Vegetables
Servings : 3
Preparation Time : not long
Difficulty : Easy

Ever popular from the Chinese takeaway, you can try this wonderful vegetarian chow mein recipe at home!.

Ingredients
Japanese noodles 500g
Celery, carrots, corn, broccoli, chinese cabbage, etc!., 750g
Sugar 1tsp
Ginger(fresh) 2tsp
Salt to taste
Chinese wine 2Tbsp
Soy sauce 2Tbsp
Sesame oil 5drops
Water approx!. 3Tbsp
Oil approx!. 2Tbsp

Method
Fry the noodles according to the instructions on packet!.

To cook the vegetables, fry the ginger in hot oil for about 20 seconds, add sliced vegetables and fry until they start to sweat!.

Now add a little water, cover and cook on a high heat until the vegetables are just cooked (If a wok is available use stir-fry method)

Now add the cooked noodles, wine, shoyu or soy sauce, sesame oil, sugar and cook for about 5 minutes to combine all the flavours!.

Variation: Tempeh or tofu goes well with noodles and vegetables!.

Hints
Note 1: If you have a large pan or wok fry noodles and vegetables together!.

Note 2: Ginger, sugar, soy sauce and wine, thickened with cornflour and water makes a good chinese style sauce!.

Note 3: Try using dry sherry instead of chinese wine

My husband who laughs at vegetarian food loves this stew/soup - if your son-in-law doesn't eat cheese, you can substitute soya protein chunks or tofu for the cheese!.

Halloumi Soup

Fry in a tsp of vegetable oil:
1 minced onion
2 tsp minced garlic
2 tsp minced ginger
2 fresh minced jalapeno chilies (optional if you like spicy food)

Add:

1 large can chick peas (drained)
1 can good quality Italian tomatoes
1/2 tsp tumeric
1 TBSP ground cumin
8 oz!. of diced Halloum cheese (available in Middle Eastern stores)
1/2 cup red wine
1 pkg frozen spinach (1 lb!. fresh spinach)

Bring to boil, then lower heat and simmer for 15 minutes!. Tastes even better reheated!. Serve over white rice for a main dish, or with crusty bread/rolls as a starter!. You can double or triple this recipe easily, and it freezes well!. Yummy!

It's not too fancy, but here's a starter all of you may enjoy!. Wash celery stalks and cut into 2" to 3" lengths!. Mix a little margarine into some peanutbutter to lighten the texture and make it easier to spread!. Add a drop of hot pepper sauce (like Tabasco) and mix thoroughly!. Spread or pipe the pb mixture into the groove of the celery pieces!. Dot with raisins!.

If you prefer something hot, a thick soup like corn chowder may fit the bill!. I'm sorry I have no recipe for it, but you can find it at www!.cooks!.com in several variations!. Again, it's something all of you may well enjoy!. He'll have a different main course, so it may be nice to all have the same starter!. Felafel Balls



Felafel Balls Ingredients
1/2 lb Dry garbanzo beans (1 cup) 1/4 ts Ground coriander
1/3 c Cracked wheat 3 ts Salt
2 sl Wheat bread, dry 1/4 ts Black pepper
5 Cloves garlic 1 ds Hot red pepper; (optional)
2 tb Parsley; chopped 2 Eggs
3 tb Lemon juice 1/2 c Plain bread crumbs
1 tb Ground cumin Oil for frying
Instructions for Felafel Balls
Cover beans with water and soak overnight!. Next morning drain beans, rinse and put in a large pot!. Cover with fresh water, add 2 teaspoons salt and bring to a boil!. Reduce heat and simmer for 1 1/2 hours!. Remove from heat and drain!. Soak cracked wheat in a cup of water for about 20 minutes!. Soak bread separately!. Grind garbanzo beans in a meat grinder or food processor with garlic and parsley!. Squeeze the water out of the soaked bread and grind!. Combine in a bowl with lemon juice, remaining salt, seasonins and eggs!. Mix lightly!. Drain the cracked wheat and add to the mixture with half of the bread crumbs!. Stir well and mix thoroughly!. Add remaining bread crumbs gradually until the mixture is manageable enough to shape the felafel!. If too soft, when all the bread crumbs have been used, add more to obtain the proper consistency!. This may be done several hours before serving!. Cover with waxed paper and refrigerate!. The make the felafel, shape small balls 1" in diameter with wet hands!. Put on a tray or cookie sheet lined with waxed paper!. Fill a heavy 10" or 12" skillet with 1 1/2" of oil and heat to medium-high (375 degrees F)!. Fry about a dozen felafel balls at a time on both sides until they become deep golden brown!. Remove from skillet with a slotted spoon!. Put on paper towels to blot excess oil!. Serve immediately!. Enjoy the wholesome goodness of my world famous Garlicky Carrots:

3 tablespoons margarine
2 cloves garlic, crushed
4 large wholesome carrots, peeled and sliced crosswise 1/2 inch thick
Salt to taste
1 teaspoon parsley flakes

Directions:

Melt margarine over medium heat!. Add garlic and sauté until aromatic (but do not brown)!. Add wholesome carrots, sprinkle with salt, cover and simmer for 15-20 minutes, stirring every once in a while, until carrots are tender!. Add parsley and mix just before serving!.

That's really nice of you to consider his diet when planning your dinner! As a vegetarian, I always really appreciate it when a host/hostess makes something special for me!. It makes me feel like they respect my choices and care that I'm taken care of, as well!. You're a great Mother In Law :)

I Googled "Vegetarian Starters" and got tons of hits!. You could try that, too!

PS: You may want to confirm the degree of his vegetarianism!. Some vegetarians don't eat eggs - some do!. Some people eat fish and call themselves vegetarians, (although that's not technically accurate, it still happens)!. Everybody is different!.

Knowing what is and is not acceptable for his diet may help you make a decision!. I'd hate for you to make an egg salad or something, just to find out he couldn't eat it :(Www@FoodAQ@Com
