Healthy food for picky vegetarian?!
I am very picky, especially about eating vegetables, and fruits!. I've been a vegetarian for almost a year, and I haven't been eating that healthy!. I'm not the type of person to go for the soy products but i eat them occasionally!. I'm also the only vegetarian in my house!. So most the time, I make food for myself!. I'm not one to cook very much, and I have a very small appetite, so does anyone have any recipies that i could try!.!.!.that maybe my family could eat too!?Www@FoodAQ@Com

We're vegetarian here as well and we barely eat any meat replacement products!. Some of the things we do eat here:
- stir-fry veggies over rice
- burritos & wraps (veggie, black bean, etc)
- pasta (spaghetti, garlic & olive oil)
- macaroni & cheese (toss in some broccoli, tomatoes & mushrooms)
- sandwiches (grilled cheeses, open face sandwiches, egg salad)
- loaded baked potatoes (with beans, salsa, all sorts of toppings)
- pizza =)
Those are what I make my husband who likes comfort food!. I serve all those with a hot veggie on the side and a green salad!.
For myself, there is nothing I love more than some cooked lentils, some wild rice and veggies on top - like tomatoes, avocado, onion, garlic!.!.!. top it all off with some red wine vinegar and some olive oil or flax oil, and you're getting protein and all sorts of vitamins!.
Do you eat eggs!? You could make a quiche, scrambled or fried eggs, or wrap some cooked eggs up in a tortilla and top it off with salsa!.
Other ideas that we eat here a lot are rice & beans, vegetarian sushi (make with avocado, cucumber & carrot instead of fish), and all sorts of different kinds of quesadillas!.
Another yummy option is taking a can of chickpeas, draining them, and mashing them up!. Then add some mayo, mustard, onion and celery and make a mock chicken salad!. It's delicious!. Www@FoodAQ@Com

You could use that fake bocaburger meat!. It's good!. My sister eats it and she's vegetarian!. I made it one night in a lasagna, and my husband didn't even know the difference!. I could taste the difference but he didn't notice!. I bet your family would eat it no problem!. There's lots of things you can eat and make for your entire family!. I'm not much on meat either, and I make a lot of things like homemade soup with dumplings!. no meat involved, for the broth just use vegetarian bouillon cubes!.
