Question: What to have for a veggie thanksgiving!?
I am a new vegetarian!. so is my boyfriend and his whole family (he was raised that way) his family is coming over for thanksgiving and i dont know what to make!. his mother cant cook any more due to a stroke, and my boyfriend is a terrible cook!. we're also having friends over who aren't vegetarian and i want to make something they'll like too!. any ideas!? thanks!! :)Www@FoodAQ@Com

Ingredients:
1/4 cup margarine
1 medium white onion
3 or 4 cups cooked pumpkin or other squash
1/2 teaspoon salt (optional)
1/2 teaspoon ground black pepper
1/2 teaspoon dried crushed red pepper (optional)
1 1/2 cups soup stock
Method:
Chop the onion coarsely!. Melt the margarine in a large saucepan!. Stir the onion into the melted margarine, add the salt, pepper, and red pepper (optional), and cook until the onion is very brown but not burned, about 30 minutes, on low to medium heat!. Stir frequently and keep covered!.
Add the cooked squash and stir in the vegetable stock!. Bring to a boil, reduce heat, and simmer for at least 45 minutes, covered, on low to medium heat!.
If the soup seems too watery, simmer uncovered until it reduces!. Serve hot, topped with cilantro or parsley (optional)!.

I'm vegan, so you have a few more options maybe, but my family makes animal free:
stuffing (at least two types, as my family is an intersection of two cultures)
mashed potatoes
dumplings
mixed squashes
green beans
peas
and we usually buy a tofurky roast (really we buy more than one)
This year I'm making vegan pumpkin pecan pie for dessert, other people will bring other desserts!.
Just make a list of what you like to eat on thanksgiving and modify the recipes!Or,if you aren't much of a cook, google "vegetarian _____ recipes"
It's so easy when you're just veg :)

Edit: For snacks we serve all different crackers and breads and chips with hummus and vegan dill dips and nummy things like that!. also nuts and grapes, which always go fast!.Www@FoodAQ@Com

Find out if they can have chicken broth/stock mixed into anything since a lot of recipes call for that, but you can buy vegetable broth/stock to replace that!. But just have a whole bunch of side dishes, all the regular and maybe some more! Perhaps the kinds of stuffing that ask for sausage can be replaced by Morningstar or Boca brands!. Have the regular desserts!. You said vegetarian not vegan, so eggs and milk and butter should be okay!Www@FoodAQ@Com

I eat Tofurkey!. It's really good if you're not expecting it to taste like turkey!. And just normal Thanksgiving stuff, like cranberries and mashed potatoes!. You might look up some recipes for vegetarian casseroles!. If your friends really want turkey but you don't want to get a whole one, you could buy some sliced turkey!. Www@FoodAQ@Com

Thanksgiving is easy for vegetarians, it is after all a celebration of the harvest! I'd recommend having some of your favorite traditional side dishes, make a vegetarian stuffing, mashed potatoes (try mushroom gravy, or make them with roasted garlic), sweet potatoes, cranberries, green bean casserole (there is a good food tv, Paula Dean recipe that my family likes, vegetarian, and fresher then most, but very buttery), etc!.

In addition, since there is no turkey, we usually have a main dish of some sort!. My favorites are butternut squash and sage risotto or a homemade tofu/vegetable pot pie (there's one that uses curry in the Vegetarian Meat and Potatoes cookbook that always goes over well, there's sweet potato in the crust itself)!. A quiche might be a simpler way to go for that, or along similar lines 101cookbooks!.com has a recipe for a zucchini ricotta cheesecake that you could modify with things they'd be excited for!.

Remember if you are doing all the cooking, that it can get out of hand fast, sometimes it helps to choose a main dish that you could prep in advance, or even cook in advance!. Get your boyfriend to help with the prep work, even if he can't cook, he can wash, chop, keep your cooking areas clear of used dishes, etc!. Good luck! Www@FoodAQ@Com

I am not a vegetarian but one year my brother brought over a tofu turkey (tofukey) as a joke and it actually wasn't that bad!. It was stuffed with wild rice!. You have to keep ladling the juice over it though a ton of times like every ten minutes of it gets dry!. Try one!. Www@FoodAQ@Com
