It is easy to get all your nutrients while you are vegetarian, but you will need to eat a wider variety of foods!. It sounds like you are eating a lot of pasta and veggies!. Start eating beans, nuts, and tofu!. Get some easy vegetarian cook books and help your mom with the cooking!. Find some easy recipes that are vegetarian, that the whole family will like!.
I think one of the difficult things about becoming vegetarian when you are a teenager, is that you may not be used to taking a truly active role in what you eat!. If your mother or father is doing the cooking for you, they may not be fixing a lot of vegetarian-friendly protein-filled dishes!. You should help them by helping cook, and pick out some of the foods that you will want to eat!.
Make sure you have plenty of canned beans on hand!. They are really easy to make a meal with!. If you drain some black beans, and heat on the stove with salsa, chili powder, cumin, and salt, you have a really easy dish to add to lots of things!. You can put this in tortillas for burritos!. You can eat it with scrambled eggs, mix it with rice, or put it on top of salad for a veggie taco salad!. They also taste good on top of boiled or baked potatoes, with salsa and cheese, or steamed broccoli!.
Saute some onion, garlic, peppers, and carrot in a large saucepan, and add several cans of beans (various) along with some stewed tomatoes, chili powder, cumin, cayenne, garlic powder, salt and pepper for an easy chili!. Serve with cheese and chips!.
Keep some bags of frozen edamame in your freezer!. This is a really easy way to add protein to a meal!. You just have to boil the pods in water for a few minutes, and sprinkle with salt!. Your whole family will probably love this, and it is so easy for either a snack, appetizer, or part of your meal!.
If you haven't yet become comfortable with tofu, try buying some of the pre-flavored, baked tofu products!. Buy some of the water-packed tofu (extra-firm)!. Slice it, and press a lot of the water out of it!. Then fry in a pan with a little bit of oil!. Separately, you can saute veggies (like celery, broccoli, onion, green beans, etc - whatever you like) and add the tofu!. Flavor the stir-fry with sweet chili sauce, soy sauce, teriyaki sauce, etc!. You can even dip the fried tofu into sweet chili sauce!.
Make sure you have veggie burgers, fake chicken burgers, veggie sausages (Boca and tofurkey make some good ones), and veggie corn dogs to add a main dish or a substitute for the meat dish that your family is eating for dinner!.
For snacks, make sure you have some nuts in the house - peanuts and almonds!. Have some roasted soy beans for a snack, or slice carrots, celery, and apples and eat with peanut butter!.
I hope this gives you some more ideas to vary your diet and get some nutrients!.
Good luck!
