Question: Vegetarian recipes my kids will eat!.!.!.!?
My kids like vegetables but I don't have a lot of recipes for all vegetarian meals!. Can someone give me some ideas!?Www@FoodAQ@Com

Vegetable Stuffing Casserole

2 (15 ounce) cans mixed vegetables
2 (10!.75 ounce) cans condensed cream of celery soup
1 (6 ounce) can French-fried onions
1 (12 ounce) package dry bread stuffing mix
3 tablespoons melted butter

Preheat oven to 350 degrees F (175 degrees C)!.
Drain one can of the mixed vegetables and pour both cans into a 2 quart casserole dish (one with a lid, preferably)!. Pour cream of celery soup over vegetables (use only one can for a drier casserole); gently stir until well mixed!. Spread fried onions over vegetables and then spread the stuffing on top of the onions!. Pour melted butter over stuffing; cover dish with a lid or with aluminum foil!.
Bake in preheated oven for 20 to 25 minutes!. Cool for a few minutes before serving!.

Mediterranean Vegetable Stew


2 tablespoons olive oil, divided
1 cup chopped red onion
2 cups coarsely chopped green pepper
2 large garlic cloves, crushed
1 cup sliced mushrooms
1 small eggplant, unpeeled, cut in 1- to 2-inch chunks
1 (28 ounce) can crushed tomatoes
1/2 cup kalamata olives, pitted and sliced
1 (15 ounce) can chickpeas, drained and rinsed
1 tablespoon chopped fresh rosemary
1 cup coarsely chopped parsley

In a large skillet, heat 1 Tb!. oil!. Saute onion and pepper until soft, about 10 minutes!. Add 1 Tb!. oil, garlic, mushrooms and eggplant!. Simmer, stirring occasionally, until eggplant is softened but not mushy, about 15 minutes!. Add tomatoes, olives, chickpeas and rosemary!. Simmer until heated through, about 10 minutes!. Stir in parsley!. Sprinkle feta cheese over stew if desired

Vegetable Noodle Bake

1 (14!.5 ounce) can diced tomatoes, drained
3/4 cup canned pureed tomatoes
1/3 cup chopped onion
1 1/4 teaspoons dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
2 1/2 cups uncooked medium egg noodles
1/2 cup small curd cottage cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1/3 cup shredded American cheese

In a large saucepan, combine the tomatoes, tomato puree, onion, oregano, garlic powder, salt and pepper!. Bring to a boil!. Reduce heat; simmer, uncovered, for 15 minutes!. Meanwhile, cook noodles according to package directions; drain!.
Spread 1/3 cup tomato mixture in a greased shallow 2-qt!. baking dish!. Top with half of the noodles!. Spread with cottage cheese; top with spinach!. Drizzle with 1/2 cup tomato mixture; top with remaining noodles and tomato mixture!. Sprinkle with American cheese!. Cover and bake at 350 degrees F for 20-25 minutes or until cheese is melted!.

Veggie and egg fried rice with veggie pot stickers on the side
Grilled cheese sandwich's and tomato soup with steamed broccoli with or without cheese sauce (so good in winter!)
Make your own pizzas on bagels and give them different veggies to pick from to put on top such as zucchini, olives, tomato, onions, etc!.
Cheese ravioli and either just put butter on top, plain tomato sauce (my fave), pesto or alfredo!. Make steamed veggies on the side
Eggplant Parmesan
Grill veggies on the BBQ (squash, zucchini, etc), serve with tomato sauce and rice!.
A hearty veggie stew with fried polenta (corn meal)
Nachos with no meat (cheese, sour cream, guac, olives, etc)
Cheese quesidillas
All bean chili
Baked mac and cheese and a big salad on the side

Most of these are pretty kid friendly (grilled cheese!) but you will also get them to venture out to try some different things (fried polenta!)Www@FoodAQ@Com
