what is your favorite vege recipe!?

You didn't say if you were also going to be forgoing eggs and/or milk!. So I gave two that don't use either, just to be on the safer side of things!.
One of the best ones that I personally have made is 'Egg Salad' that has no egg at all in it!. Yes, it really does taste like egg salad!. I even passed it off on the neighbors before telling them that they were actually eating tofu!.
All you need is firm or very firm tofu totally drained!. I like to press mine to get the extra mosture out of it!. Mash it till it looks something like scrambled eggs!. Add some chopped celery, a stalk or two (depending on how much you like)!. Some chopped bell pepper (I like red as it tends to be sweeter)!. Some chopped onion!. Add 1/4 cup of salad dressing (example: Miracle Whip), 1/2 teaspoon of Dijon mustard!. 1/8 teaspoon of turmeric!. Salt and pepper to taste!. Mix it all together and refrigerate till ready to use!.
There are others that I could suggest!. Just that this is one that I have made and others have eaten it and really couldn't tell the difference at all!.
If your looking for a main dish and want to try something new and different for many, I would suggest "Spicy Peanut Noodles"!. 1/3 cup of peanut butter NOT chunky!. 1 1/2 tablespoons of rice wine vinegar!. 2 tablespoons of soy sauce!. 1 to 2 teaspoons of chili paste with garlic!. 1/2 teaspoon of sugar!. Wisk all together untill blended till creamy (you can thin with water if needed)!. Pour over 8 oz!. of cooked linguine noodles!. Add one bell pepper that has been cut into thin strips (red is pretty and adds a sweeter taste to it), 3/4 cup of chopped seeded cucumber, 3 green onions cut about 1/4 inch long (small enough to fit into the mouth with ease)!. Toss well and garnish with cilantro!.
Both are really good and very easy and quick to make with things you more than likely have around the house (except possibly the chili paste and rice wine vinegar)!.
If you don't mind answering, who is your "significant other" to be cutting you off of meat!? Is this really something that you personally want to do!? Reason I ask!? If it isn't something that you personally want to do, you will not have success at it!. I am sort of in your situation as well!. He's a pescatarian and I have food allergies to seafood, so we're just eating vegetarian at home!. It hasn't been that easy for me to adjust!. I was a vegetarian for 5 years before, but that was a long time ago!.!.!. and I'm really not a big fan of tofu, but he is!. So as you can see, we need some REALLY good recipes to get by!. My favorite are:
Tofu stir fry - noodles (rice, udon, just plain spaghetti) or rice (brown, jasmine or white), any vegetables fresh or frozen you have on hand, can of sliced water chestnuts and I either use House of Tsang sauce or make mine from scratch!. My mom is Japanese, so I tend to just make it from scratch because it's fast, cheap and easy!. Mix 4oz hot water with 1 vegetable bouillon cube or 1 tsp bouillon powder until dissolved!. Add 2 oz soy sauce, 1 tablespoon hoisen (if allowed, some do not eat it) and a dash of teriyaki!. Once the veggies and tofu are almost done cooking, just throw is all over them and finish cooking!. I have discovered our favorite way to prepare the tofu is:
1!. Press hard tofu to remove excess water by covering it in paper towels and putting a heavy book on it!. Do this on a cutting board or baking dish!.
2!. Slice the tofu into little steaks about 1/2" thick and 2x3"!. Just slice it several times down the top and then in half the other way and half in the center!.
3!. Marinate the tofu in the same homemade sauce as above!. It doesn't have to be long!.
4!. Pan fry the tofu on each side until golden brown, it only takes a couple minutes!. Then I set it aside to drain on paper towels and place it on top of the stir fried vegetables!.
I know you said no need to go into detail, but this makes for a wayyyy better stir fry than your run of the mill ones!.
Other favorites:
Quorn gruyere patties (excellent meat substitute, way better than boca you'll never even know) with rice and vegetables
Mushroom and spinach lasagna (Betty Crocker has an awesome, easy recipe for this!. I use the part skim ricotta with frozen spinach and either sliced fresh mushrooms or a jar of chunky Prego mushroom sauce)
Homemade macaroni and cheese
Bean and cheese tacos
Pizza - cheese, mushrooms, black olives, bell peppers, onions, garlic, whatever
Pitas - sauteed onions, zucchini, squash, eggplant and mushrooms or a fresh one of lettuce, tomato, avocado and lemon juice
Fettuccini alfredo with rosemary potatoes
Any tomato sauce pasta with vegetables
Tomato soup with grilled cheese sandwiches
Quiche
You could make something like tuna noodle casserole, only instead of using cream of chicken soup and tuna, put cooked chickpeas in as the tuna and use cream of mushroom or cream of celery soup
Morning Star Grillers (fake hamburgers) or Chik'n patties on toasted bread as a patty melt or hamburger buns with fries
Stuffed mushrooms are an awesome snack, appetizer or side
Vegetarian french onion soup (make sure to put some toasted or stale crusty bread in the bottom of the bowl and melt cheese on top)
If you will be eating eggs, egg salad sandwiches and eggs goldenrod (hardboiled eggs diced into a basic white sauce over toast) are great!.
Bean and rice stuffed bell peppers
Any sort of asian noodle dish like Pad Thai
Haluski (Polish cabbage with noodles)
Curry over rice
Cheese enchiladas or guacamole enchiladas - first heat the tortillas, then fill them with cold guacamole and place them on the plate like enchiladas and pour tomatillo sauce over them
Pasta salad - there are tons
Biscuits or dumplings with a mushroom or vegetable stew
Bagel veggie pizzas
Breakfast for dinner (or breakfast):
Fried egg sanwiches
Pancakes or Waffles
Morning star (or other meat replacement brand) sausage links
Scrambled or eggs over easy with cheese
Muffins
Cereal
