Yummy Yam Frosting
Ingredients
1 cup mashed baked yam
2 ounces softened cream cheese (1/4 cup)
2 teaspoons melted unsalted butter
2 tablespoons maple syrup or brown rice syrup
1 teaspoon lemon juice or orange juice
Directions
Place yams, cream cheese, butter, syrup, and juice in a bowl and cream together!.
Puree this mixture in a blender, food processor or with a hand mixer to a smooth, spreadable consistency!.

I just want to let you know two things:

1!. While Splenda may be used to replace sugar, the sugar used in frosting is confectioner's sugar, which Splenda cannot replace!.

2!. If you can't find silken tofu, use whatever tofu you can find and blend it with a little soymilk!. You can also use a mashed banana!. Www@FoodAQ@Com

Try splenda instead of sugar!. I don't have a specific recipe on me but they're usually pretty interchangable (not all frosting recipes use powdered or confectioners sugar, especially if they're cooked frostings)!.

Where do you live that you can't get silken tofu!? I live in old hick-town, MO, and they even carry tofu here!. Check in your produce section with the organics or sometimes they keep it with the lunch meat and packaged polenta!.

You can try this recipe, using silk creamer instead of heavy cream but I don't think it would get as fluffy!.
