Answers:
A burrito with brown rice, black beans, (or pinto) tomato and corn salsa guacamole, sautéed onions, scallions, and hot sauce in a whole wheat or corn tortilla!. I'm vegan so I skip the cheese and sour cream!. (these also work well as lettuce wraps for a lighter meal)

Empanadas, morning star crumblers are perfect for the filling!. Goya makes empanada dough that's already rolled out, all you have to do is stuff, press, and fry

quesadillas- onions, peppers, cheese (or soy cheese) refried beans, tomatoes, black olives!. El Paso makes an enchilada sauce that goes great over top of these!.

A great way to spice up existing mexican recipes is to make your own fresh salsa it tastes WAY better than the canned stuff, this is my favorite recipe!.!.!.

2 large tomatoes
onion slices (they add a strong flavor, use sparingly)
scallions
Lots of lime juice
Cilantro
hot sauce is optional
Coarse salt
Pulse 3 or 4 times in a food processor, but leave it chunky!.

This salsa is perfect with home made chips!.!.!.

Cut corn tortillas into wedges fry in peanut oil until golden brown and lightly salt!. They taste much more authentic than tostitos!.

Vegetarian Tamales Yum!


Ingredients

* 2 cups masa corn flour
* 1/2 cup butter, cubed
* 1 teaspoon salt
* 1 pinch sugar
* 1/2 cup broth
* 1 teaspoon baking powder
* 1/4 teaspoon black pepper
* 2 1/2 cups corn (fresh or thawed frozen will work)
* 1 1/2 cups cheddar cheese (mexican cheese is better, reserve about half for filling)
* 4 ounces roasted chilies (fresh roasted skinless peppers work too)
* 2 tomatoes, deseeded, pealed and sliced (can immerse in boiling water for 20 seconds, and then ice water to loosen skins)
* parchment paper or corn husks

Directions

1!. In a food processor blend corn and cheese until corn is in nearly a meal consistency!.
2!. Add butter, Masa flour, salt, sugar, pepper and baking powder and process until the mixture is loosely mixed!.
3!. Add broth and mix until just smooth!.
4!. Place about 2 tbsp of mixture into soaked corn husk or parchment paper!.
5!. Fill with some cheese, slices of roasted chili pepper and tomatoes!.
6!. Close parchment paper or corn husk around filling, trying to cover filling with Masa flour mixture!. If you have trouble closing or have too much filling try using less in your subsequent tamales!.
7!. Roll wrapper closed, roll and fold over ends and set aside!.
8!. Once they're done they can be refrigerated or frozen, or placed immediately in steaming tray above boiling water for about 30 minutes, or until Masa flour mixture is set!.

This is super easy and tasty-it's my mom's recipe!.

Green chile enchilada casserole

Mix 2 cans cream of mushroom soup (I use the low fat, low sodium, you can't tell) with one can of chopped green chiles!. Add enough of the liquid from the chiles to make a smooth consistency!.
Tear uncooked corn tortillas in quarters and make a layer in the bottom of a 9x9 baking pan-cover with a layer of sauce and then shredded cheese(I like cheddar)!. Continue until pan is full, ending with cheese( 3 layers in my pan)!. Bake at 350F 25-30 minutes until cheese bubbly and slightly browned-rest 5 minutes and enjoy!.

I'm not a good cook so I make spicy black bean veggie burgers in the microwave,break it up into pieces and layer it with mexican beans, mexican rice,cheese and tortilla chips!.Not vegan or real mexican but it tastes really good!.Www@FoodAQ@Com
