This soup is really good!. I make it all the time!. It is also easy to change it by adding lots more veggies, or using a different type of noodle!. I also like to add a bit of chili oil in the end!.
Ginger Miso Soup
8 oz udon noodles or linguine
6 cups water
? cup roughly sliced gingerroot (keep skin on)
? cup tamari soy sauce
? lb extra firm tofu (chopped into ? inch cubes)
2 Scallions (finely chopped)
? cup shiro miso (white miso)
1 Tbs!. Oriental sesame oil
1!. Bring 3 quarts of water to a boil and cook udon noodles – about 6 min, or until tender, but not mushy!. Drain in a colander and rinse under cold running water!. Set aside
2!. In the same pot, bring the 6 cups of water , ? cup tamari sauce, and ? cup gingerroot to a boil!. Lower heat and let the broth simmer 10 minutes!. Remove ginger with a slotted spoon!.
3!. Stir in tofu cubes and scallion and cook 1 minute, or just to heat through!. Place white miso in a bowl, add ? cup of broth into the miso to dilute it and prevent lumping!. Mix until miso is dissolved!. Pour the mixture back into the broth!. Remove from heat so the miso doesn’t boil!. Stir in 1 tablespoon sesame oil!. Place the udon in large soup bowls and ladle some of the hot soup over it!. Garnish with thinly sliced scallion!.

Black Bean Lasagna
9 lasagna noodles (8 ounces)
2 15-ounce cans black beans (rinsed and drained; divided)
? cup chopped onion
? cup chopped green bell pepper
2 cloves garlic, minced
2 15-ounce cans tomato sauce, regular or seasoned
? cup snipped fresh cilantro
1 ? cups low fat cottage cheese
1 8-ounce package light cream cheese, softened
? cup light sour cream
* Halved fresh tomato slices (optional garnish)
* Fresh cilantro (optional garnish)
1!. Cook noodles according to package directions; drain and set aside!.
2!. Mash 1 can of beans; set aside!.
3!. Spray large skillet with nonstick cooking spray; add onion, green pepper and garlic!. Cook and stir over medium heat until tender, but not brown!.
4!. Add mashed beans, unmashed beans, tomato sauce and snipped cilantro; heat through!.
5!. In mixing bowl, combine cottage cheese, cream cheese, and sour cream; set aside!.
6!. Spray 3-quart rectangular baking dish with nonstick cooking spray!. Arrange 3 noodles in dish, top with one-third bean mixture, spread on one thrid cheese mixture!. Repeat twice, ending with bean mixture!. Reserve the remaining cheese mixture!.
7!. Bake covered at 350 degrees for 40 to 45 minutes or until heated through!.

1 cup hot water
1 tbsp ketchup
Combine TVP, water and ketchup!. Let stand 10 minutes
? large onion, chopped
? green pepper, chopped
2 cloves garlic, minced
1 jalapeno pepper, chopped (optional)
Heat a large Dutch oven, Add:
1 tbsp olive oil
Over medium heat, sauté onions, pepper and garlic a few minutes!. Sprinkle over the TVP and stir with a fork:
1 tbsp chili powder*
1 tsp cumin
1 tsp oregano
? tsp cayenne
Add the TVP to the pan and cook a few minutes!. Stir in:
1 14-oz can tomatoes, coarsely chopped
1 14-oz can your favorite beans
1 cup water or vegetable broth
Cover and simmer for 30 minutes to one hour!. Taste and add salt!. If desired, add a 16-oz package of frozen corn during the last 15 minutes!.

You should buy some Quorn naked cutlets and follow the instructions, add some really good seasoning!. Serve that with whatever sides she likes!.

my sister is a vegetarian and we make her stir fried noodles with low fat oil!. we also put fried tofu and some fresh veggies!. if u dont like noodles, use rice! Www@FoodAQ@Com
