100% Cacao? What do I do with this nasty stuff?!
My roommate and I were in the chocolate isle just poking around when we found this 100% Ghirardelli Cacao!. We thought, "hey, we love dark chocolate! Maybe this stuff will be delicious!"
So we bought it and it's just nasty!. It tastes okay at first then there's this horrible aftertaste of bitterness!.!.!. it's like a mutiny of my taste buds against me!.
So what do we do with this stuff!. We have two bars of big Ghirardelli 100% Cacao chocolate!. We tried mixing it with granulated sugar!. Didn't work!.
One more thing: my roommate's vegan!. Which is really the reason we didn't settle for 85%!.

*chuckle* I'm just remembering my friend, who made the same mistake as you two!. I'd melted 100% cacao and was going to use it for brownies!. My friend went to taste it and I warned her not to, since it wouldn't taste good!. She must've thought that I was joking or trying to keep her out of my brownies, because the second my back was turned!.!.!. well, let's just say that the look on her face when I turned back gave her away!.
Use it for baking!. That's your best bet!. You could also try to make some truffles!. Try using coconut cream instead of heavy cream (sweeten it pretty heavily!.!.!. I'd use something liquid) for the ganache!. You could also use it to make some yummy hot chocolate, in pudding, for grating over stuff, or in a chocolate sauce!. Experiment away!. Www@FoodAQ@Com

You can add some agave nectar and it would taste fine but if you don't have that try deluting it in soy milk (rice milk, hemp milk watever you please) and mix it in with the chocolate try to add some sweetner of some sort but don't put pure sugar because the taste can come out a little too stroung try a liquid sweetner and use it to taste!. When they say 100%, they mean it!. Nothing else in there, including sugar!. Why in the world did you think it would be sweet!? It's baking chocolate!. Use it for baking!.Www@FoodAQ@Com
