Do you have any good vegan recipes for fresh green beans?!
The beans at the grocery store were really tempting, but as soon as I got them home I realized I've only ever used canned green beans and don't know what I'm doing with the fresh kind!.Www@FoodAQ@Com

I'm not a vegan but here is how I make them, and I believe it qualifies as vegan!. First you'll want to snap off the ends and cut them into bite size pieces!. Put them in a saucepan and just enough water to cover them!. Add 1 small diced onion and a peeled, diced potato (the red ones are best for this) or several small new potatoes!.
Add about a tsp of salt and simmer over med heat until everything is tender then drain!. Let it set in the drainer for a few minutes to "steam out" to get rid of the excess moisture!.
In a medium skillet heat a couple tablespoons of olive oil and a couple minced garlic cloves!. Add the beans and sautee quickly!.
Salt and pepper (freshly ground of course) to taste and enjoy!.Www@FoodAQ@Com

When making green beans, it is absolutely critical to use fresh beans! Frozen (and canned, ick!) are really gross, so if the fresh ones don’t look good that day, just put off the green bean dish until another day!. Good green beans will be plump and firm, not wrinkly or flaccid!. A light steam and salt can make an easy, tastey bean, but if you want something with a little more pizazz, try out these!. They’re very yummy and will go with just about any potato, rice or other grain dish that you can come up with!.
Ingredients:
1/4 C slivered almonds
2 Tbs dried cranberries
2 handfuls fresh green beans, washed and ends snapped off
1/2 tsp salt
2 tsp Earth Balance “butter”
4 Tbs water
Instructions:
Heat the “butter” over low in a small pan!. When the “butter” has melted, add the almonds and cranberries!. Cook for 3-5 minutes, until almonds are lightly toasted!. Add the green beans and salt!. Increase heat to med-high!. Throw in 2 Tbs water to create a steam for the beans!. When that water has cooked off (about a minute), repeat with 2 more Tbs water!. The beans should turn a very bright green color!. Remove from heat and enjoy!

Even if you don't have a wok, just use heavy frying pan!. Heat peanut oil in the pan!. Put some minced garlic and ginger!. Fry one minute!. Add string beans!. Continously stir on medium heat, about 5 minutes!. Shut off heat!.
Don't add soy sauce, salt, pepper, or corn starch!.
It has only string beans, minced garlic, minced ginger and peanut oil!.
If you want, you can add sliced Almonds along with string beans!.
The finished beans will be crunchy, not mushy!. No water is added!.Www@FoodAQ@Com

The rest is pretty much to your liking: Toss in a little sesame oil, add halved cherry tomatoes, garnish with white sesame seeds!. And like any recipe, salt to taste!. Serve cold!. I blanch them for 3-4 minutes and then saute them in extra virgin olive oil and garlic!. Add a little salt and pepper and they are fantastic

I bet they would be good steamed!. I've never done this before, but off the top of my head, I think I would steam them, toss with some olive oil, and some spices - maybe some garlic powder!.!.!.!. You can never go wrong with garlic!!Www@FoodAQ@Com
