Vegan recipe using green bell peppers and garbanzo beans?!
since all i have in my kitchen at the moment is 2 green bell peppers, a can of garbanzo beans, onions, silk tofu and um spinach

For a meal I would suggest just sauteing all those together!. Sounds really good to me!.
Another good idea is roasted pepper hummus!.
Roast the peppers and onions in the oven (500 degrees for about 10 min)
Garbanzo beans
2 T Tahini (you can omit this, but it's best with it!.
1teaspoon of lemon juice
Salt n pepper to taste
olive oil
Mix the roasted peppers and onions and the garbanzo beans in a food processor mix in the Tahini and salt and pepper and olive oil!.

tofu

grill or boil tofu (i personally eat raw silk tofu though)
depending on how u done ur tofu, set it aside
in a bowl put beans,peppers,onions,spinach

for dressing
1 clove garlic chopped
1 teaspoons whole grain mustard
juice of 2 lime
1 tablespoon white wine vinegar
4 tablespoons olive oil
1 teaspoon capers
3 tablespoons fresh cilantro, chopped
Freshly ground black pepper to taste
put everything together except oil,cilantro,capers
whisk
then while whisking gradually pour oil til it bindswell
add capers n cilantro after
whisk

then pour in salad in bowl
mix throughly then present on plate with tofu on top served with bread
