Vegans, what do you use for egg replacement?!


Question: Vegans, what do you use for egg replacement!?
My son is recovering from a bad bout with celiac disease (took several months to get diagnosed) and has a host of other dietary reactions at the moment, among them a bad reaction to eggs!. He is vegetarian, gluten-free, and at the moment, lactose and egg-free!. He is getting protein from other sources and is taking a multi-vitamin, but I'm wondering about some good ideas for egg replacement!. For some reason, every "egg substitute" I can find on the market is "made with real eggs"!.

I'm looking for something to use in baking, but he also would like to have something that's at least fairly similar in consistency to scrambled eggs or an omelet!. (He's fine with putting soy cheese & veggies in for flavor!.) This is fairly new to us (no dairy or egg), and I'm hoping you can help me with what to try and what to avoid :)

also, any ideas that come to mind for snacks that don't contain gluten, lactose, or eggs are totally welcome!

Tofu scrambled with soy cheese and veggies make for decent eggs I'm guessing!.!.!. we can't have dairy/eggs/soy (food allergies) so I wouldn't know but I remember reading that somewhere years ago!.


What is a good substitute for eggs!?

* Ener-G Egg Replacer - follow directions on box!.
* 2 tbsp cornstarch = 1 egg
* 2 tbsp arrowroot flour = 1 egg
* 2 tbsp potato starch = 1 egg
* 1 heaping tbsp soy powder + 2 tbsp water = 1 egg
* 1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg!.
* 1 banana = 1 egg in cakes!.
* 1 tbsp milled flax seed and 3 tbsp water = 1 egg!. Light, fluffy cakes! Www@FoodAQ@Com

I can't help you with a Vegan diet, however I would suggest you check with support groups for folks with egg allergies!. They would also know what you can substitute for egg since they REALLY have to be egg-free!.Www@FoodAQ@Com

Plain unsweetened applesauce works well in some things like pancakes and brownies, and Ener-G Egg Replacer works well in cake batters and pies!.Www@FoodAQ@Com

Ener-G Egg replacer works in baking and cooking but I have yet to find something for the taste of eggs- other than tofu!.Www@FoodAQ@Com

my ex had a similar problem, he just cant eat cake cuz the contents make him feel funny!. im a enthusiastic cake baker(just home baking) and cake muncher; so i love to bake to express my love in the cake for him back then!.anyways heres a recipe that i developed n he hasnt died or reacted violently yet :P


the sponge cake



50g dairy free margarine
75g caster sugar
25g soya flour or tapioca flour
50g potato flour
50g rice flour
? tsp bicarbonate of soda
1 tbsp golden syrup
5 tbsps soya milk

set oven gas mark 5

grease an 18 cm (7") sponge cake tin or place papercases in in tin

in a litre jug mix the bicarbonate of soda, soya milk and golden syrup together!. set a aside!.

in a bowl beat margarine and sugar together until creamy

pour the liquid mixture from jug into the bowl

mix well together til its bind!.

add flour

mix

pour mixture in tin or paper cases

put in oven for:
25 minutes for tin
10 - 15 for paper cases

check to see if cooked by touching the surface!.if it bounces or springs back wen u let go its done!.

take out from oven and let it set for 10mins

after 10mins take the cake content out n let it cool properly

once cooled decorate serve with jam and icing :D
