2!. Carrots!. (diced)
1C!. Corn!. (frozen or canned)
1!. Onion!. (diced)
2!. Oxo cubes!. (beef, chicken or vegetable)
1!. Parsnip!. (diced)
1C!. Peas!. (frozen or canned)
2!. Potatoes!. (diced)
Peel Carrots, Onion, Parsnip and Potatoes!.
Place in a casserole dish and add in the peas and corn!.
Dissolve the stock cubes in 2 cups of boiling water and pour over veggies!.
Cover and cook at 165C for about 30 minutes!.
Add S & P to taste, and thicken the liquid if required!.

Portobello Mushroom Burgers

4 portobello mushroom caps
1/4 cup balsamic vinegar
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon minced garlic
salt and pepper to taste
4 (1 ounce) slices provolone cheese

Place the mushroom caps, smooth side up, in a shallow dish!. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt, and pepper!. Pour over the mushrooms!. Let stand at room temperature for 15 minutes or so, turning twice!.
Preheat grill for medium-high heat!.
Brush grate with oil!. Place mushrooms on the grill, reserving marinade for basting!. Grill for 5 to 8 minutes on each side, or until tender!. Brush with marinade frequently!. Top with cheese during the last 2 minutes of grilling!.Www@FoodAQ@Com

Well, depends on exactly what you mean by vegetarian!. Lots of people call themselves vegetarians, but eat fish for example!.

So, I will respond as if the person is a strict vegetarian (no animals, no animal by products)!.

I love grilled portabella mushrooms (first marinate in a yummy glaze - like balsamic vinaigrette - there are excellent recipes out there for this)!. A side of roasted potatoes, or garlic mashed sounds really yummy to go with that as well!. Then put some broccoli, or maybe some grilled asparagus, or how about lemon broiled green beans by Dreena Burton yum!

Just remember to check if they each dairy or eggs since that will change what you can or can't serve them!

If the menu above doesn't sound appealing, you can probably find some good help by looking through a few vegan or vegetarian blogs!. Some I enjoy would be Fat Free Vegan Kitchen Blog, Dreena Burton's Vegan Blog, Vegan Lunchbox (great for listing entire menus)!.

1 (16 ounce) package mozzarella cheese, shredded and divided

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
Dip eggplant slices in egg, then in bread crumbs!. Place in a single layer on a baking sheet!. Bake in preheated oven for 5 minutes on each side!.
In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom!. Place a layer of eggplant slices in the sauce!. Sprinkle with mozzarella and Parmesan cheeses!. Repeat with remaining ingredients, ending with the cheeses!. Sprinkle basil on top!.

i'm not a vegatarian but have friends who are and i love eating veggie style!.

one of my all time favorites is eggplant parmesean!.

just like chicken parm, but with eggplant slices instead!.

Bread them and fry them, top with spaghetti sauce & parm cheese and serve over cooked spaghetti noodles!. Www@FoodAQ@Com
