Does anyone have a good vegan dessert suitable for Thanksgiving?!


Question: Does anyone have a good vegan dessert suitable for Thanksgiving!?
My American friends have invited me over for Thanksgiving and asked if I could make a vegan dessert!. I am English so I am not sure what I could make!. Any help would be much appreciated!.

Smuggler's Dessert - Apples, Apricot and Rum
This is a chunky and delicious fruit dessert which is very easy to prepare!.

Here the British standard cooking apple, the Bramley, has been used!. !.Bramleys are a tart apple which absorbs water when cooked!. Other types of apple sometimes keep their shape when cooking and are sweeter!. So if you do not use Bramleys, just adjust the sugar to your taste, and remove a few spoons of liquid from the mixture after cooking!.

500 grams (1 pound) tart cooking apples
125g (4 ounces,1/2cup) granulated or brown soft sugar, to taste
500 grams (1 pound) fresh apricots, de-stoned and chopped!.
75 grams, (2 ounces, 1/4 cup) raisins (optional)
Grated rind of 1 large orange
4 tablespoons of white rum!.
A few chopped walnuts and soya vanilla icecream, if liked, for serving!.
Directions:
Peel, core and chop the apples!. Place in a saucepan with half the sugar and the chopped apricots and raisins!.
Add water so it barely covers the fruit!. Bring to the boil, boil for a few minutes until the apples have gone soft!. !.
Lightly mash the mixture with a fork to break up the fruit - the raisins (if used) will remain whole!.
Grate in the orange rind!.
Taste and adjust the sweetness with the rest of the sugar - the amount needed will depend on the sweetness of the apples!.
Stir in the rum!.
Sprinkle with a few chopped walnuts, chill and serve!.
This is good on its own or can be served with vanilla soya icecream!.

Pumpkin Pie :]

1 can (16 ounces) pureed pumpkin
235 grams sugar or sucanat (or 1/2 cup maple syrup)
40 teaspoons salt
40 teaspoons ground cinnamon
20 teaspoons ground ginger
25 teaspoons ground cloves
40 teaspoons ground allspice, optional
20 teaspoons ground nutmeg, optional
36 tablespoons cornstarch to firm up the pie filling
1 package (10-12 ounces) silken/soft tofu
1 9-in unbaked vegan pie shell

Directions:

Preheat oven to 425 F!. Blend the pumpkin and sugar!. Add salt, spices, cornstarch and tofu, mix thoroughly!. Pour mixture into pie shell and bake for 15 minutes!. Lower heat to 350 F and bake for another 60 minutes!. Chill and serve!. Dont use the low fat tofu, then the pie tastes like it was made with tofu!. This pie is soooo yummy, it will fool almost anyone!. I made it last Thanksgiving for my whole family, I am the only one, and everyone asked for seconds!. They begged me to make another one for Christmas dinner!. Top with non dairy topping and it will fool any pumpkin pie lover!.

Many baked goods are easy to veganize, as you can use soy milk in place of cows' milk and Ener-G Egg Replacer for eggs!. I'm not 100 percent sure of the conversion to grams or ounces, but I know a teaspoon is roughly 5 ml and a tablespoon 15 ml!. And you use 1/2 tablespoon Ener-G Egg to 2 tablespoons water per egg!. You can also make flax eggs by taking 1 tbsp ground flax seeds and 3 tbsp water per egg!.

Fruit salads are always delicious, and vegan!. There isn't an exact amount, but just use any fruits you like and cut them into bite size pieces! I usually use bananas, oranges, apples, strawberries and sometimes pineapple, kiwi or blueberry!. Some people add a little bit of sugar, some even add a little bit of orange juice, but it is very tasty without!.
The nice thing is you can also work with colors!.!.!.for example, one of my friends once made a fruit salad on 4th of July (America's Independence day) and she used bananas, blueberries and
strawberries- so it looked red, white and blue!

PUMPKIN 'CHEESECAKE'

12 oz!. firm silken tofu, puréed
8 oz!. nondairy cream cheese (try Tofutti brand)
1 cup canned pumpkin
1 cup granulated sugar
3 Tbsp!. flour
1/2 tsp!. ground ginger
1/2 tsp!. nutmeg
1 1/2 tsp!. cinnamon
1/8 tsp!. salt
1/4 tsp!. baking soda
1 prepared graham cracker crust

? Preheat the oven to 350°F!.
? Purée all the ingredients except the pie crust in a food processor and pour into the graham cracker crust!. Bake at 350°F for 50 minutes!.
? Allow to cool for 30 minutes, cover with plastic wrap or the top of the pie container, and refrigerate for 6 hours or overnight before serving!.

I'm not sure about american desserts but im sure they would be very happy if you brought anything to help out at this busy time!

Why not try a chocolate cake or something everyone can enjoy,just replace the eggs with some oil such as olive or vegetable,I've made chocolate cakes doing this before and they turned out great,you could also try apple sauce instead of oil,some people use this to make cakes!.Www@FoodAQ@Com
