Question: Need help getting a VEGAN lunch!.!?
I made a bet with my friends, and we need to go Vegan for the day!. I need a lunch-box lunch!. (can't need to be refrigerated other than ice packs, and can't need to be cooked) and also VEGAN means no meat OR animal buy-product!. First person to answer and have be a real recipe BEFORE tomarrow (it's 8:08 pm) gets the 10 points! Www@FoodAQ@Com

Im not sure what ingredients you have at home or what you like to eat of how fancy you want your lunch to be but im a vegan and there are a lot of options!!

my favorite sandwich is on whole grain bread and it has avocado, tomato, humus, vegan cheese (if you have any), lettuce and whatever other veggies you have in the fridge!.

A cold pasta salad is also a good option, i usually use gluten-free pasta which is made out of brown rice!. COok the pasta the night before, add olive oil, a simple vinagrette or whatever vegan dressing you have, baby tomatos, other veggies, salt and pepper and then just keep it in the fridge read to go the next day!. Its really good!

A good old peanut butter and jam sandwich is vegan!.

A juice box, any fruit, veggies, dried fruit, nuts!.!.!.

You could cook some cous cous (it only needs boiling water poured on it, and leave for 10 mins), cook it the night before, so it goes cold, and then before you go out for the day, add some chopped onion, tomato, carrot, pepper, any salad vegetables that you like will work, and stir in some oil and vinegar dressing!. Put it into a sandwich box, and don't forget to take a fork!.

Or, if you are in the UK, buy some oatcakes, and a tub of hummus, spread the hummus over the oatcake and roll it up!. Take carrot fingers (you can even buy these ready made from some supermarkets) and cauliflower florets as well, or some fresh fruit!.Www@FoodAQ@Com
