Carefully remove the stalks from two large, flat mushrooms (per person) and place them in a food processor along with a small onion, chopped in half first, two tablespoons of pine nuts, two tablespoons of vegan bread crumbs or a slice of bread torn up into pieces and a couple of teaspoons full of red or green pesto; blend the mixture together until almost smooth and then scoop it out onto the mushrooms!.
Take a bowl and cut up some tomatoes, celery sticks, sweet potato or butternut squash and sweet pepper!.!.and anything else you like, ad a good teaspoon of pesto and two of olive oil; stir to coat everything and arrange it in a baking dish alongside the mushrooms, sprinkle with black pepper and roast everything for thirty minutes at 160 deg!.c!. or until the vegetables are all tender and just beginning to crisp on top!. to keep with the thanksgiving theme you can take a couple of cobs of corn and rub them lightly with olive oil and a little salt and pepper; roast them at the same time, for the same time as the rest of the meal!. Serve it all up with rice or bread and finish the meal with some good flapjacks and perhaps a peach, cut in half and poached in white wine for fifteen to twenty minutes!.!.!.or sprinkled with a little sugar and baked for fifteen minutes!.
