What can I serve a vegetarian senior in a nursing home?!
I work in the kitchen in a seniors housing facility!. Out of all the residents there is one vegetarian!. This person will eat eggs, and consume milk!. They will not eat anything that resembles meat, like tofu or meatless burgers etc!. This person hates potatoess!. Finding a soup to serve is easy, but it is tough for a main dish!. This person isn't too fussy, but will send her supper back and refuse to eat what I have prepared!. So easy dishes would be appreciated!. That way if she refuses to eat it, I won't have wasted allott of precious time!. Thanks!.

Good God!. She's an adult, not a child, and I'd be absolutely mortified if a seniors' worker treated my vegetarian great-aunt as if she were a child!.
Some very easy foods that I used to serve to my aunt, before she passed away!.!.!.
- baked beans on toast
- omelettes
- egg sandwich
- spaghetti with tomato sauce
- pasta with cheese sauce
- pasta with peas, ricotta, salt, pepper, and parmesan
- jacket potato - try with cheese/salsa/avocado or baked beans
- veg chili with cheese on top
- mushrooms sauteed with garlic and butter
- kebabs made with veg and brushed with soy sauce or other sort of suace
- pan-fried slices of polenta (ready made at the store)
- chickpeas in curry sauce or any other sauce she prefers
- zucchini, peppers, or tomatoes stuffed with couscous and topped with a little cheese

Try some vegetable fried rice, or eggplant lasagna!. Pierogis, or vegetarian spaghetti!.Www@FoodAQ@Com

There picky, just like her, and they make a fuss if they don't like some thing!.
Im a vegetarian too but im not picky at all, so this is a easy subject for me!. If its not too much work try lasagna, my mom make a delicious lasagna, or try just asking her before hand what she wants for dinner that night!. And if that doesn't work then at the beginning of each week print out a schedule of each day and the menu for each day and give it too her, them tell her that she can make any changes that she wants but make sure she understands that when the day comes she cant change it back!.
Hey who knows maybe if your really nice to her and convince her that the food you have prepared is extremely delicious, then she'll be willing to try it!.
If you want, you may even be fastidious right back at her! Fight fire with fire as they say!. although, she is a senior, never mind scratch that!.
