Question: Thanksgiving dish for vegetarian!?
I'm having a TG dinner at my place tomorrow and one of my friends is a vegetarian!. I feel bad feeding her only salad and mashed potatoes!. What is a fairly easy but elegant vegetarian main I can make her!? Thanks!.Www@FoodAQ@Com

mushroom stroganoff or risotto, half an acorn or other squash and stuff with a cheesy rice mixture with some veggies and fresh herbs!. Make a few extra as the other guests might like some!. You can put this together the night before so it only has to be heated!. bow tie pasta with artichoke hearts, scallions and red bell peppers in an Italian lemon vinaigrette with Parmesan cheese on the side!. Twice baked potatoes with some broccoli added provides a complete protein!. Www@FoodAQ@Com

3)au gratin Brussels sprouts

Ingredients:
1 quart Brussels sprouts
2 tablespoons Butter
1/2 cup Green onions, chopped
1 1/2 teaspoon Garlic, chopped
1 1/2 teaspoon Parsley, chopped
1 cup Water, reserved from cooking
1/2 teaspoon Salt
1/8 Pepper
1/2 cup Cheddar cheese, grated
2 1/2 tablespoons Bread crumbs

Directions:

Preheat oven 325 F!. Wash and "x" bottom of brussels sprouts!. Place in boiling water, enough to cover!. Boil and simmer 10 mins or until tender!. Drain and reserve 1 cup hot liquid!. Melt butter in small skillet!. Add green onions and saute 3 mins!. Stir in flour and cook until flour is dissolved, 3 mins!. Add garlic and parsley!. Cook 3 mins more!. Pour in reserved water!. Add salt and pepper!. Bring to a boil, stirring constantly until thickened to consistency of heavy cream sauce!. Place sprouts base down in a buttered casserole!. Pour sauce over!. Top with grated cheese then breadcrumbs!. Bake 30 mins or until top is browned!.

Ask yourself what kind of meal sounds nice and homey, and then take meat out of it!. Try vegetarian lasagna, vegetarian shephard's pie, or a curry or stew baked in a small squash!.Www@FoodAQ@Com
