Coarsely chop about 3 c!. mushrooms, 1 large green pepper, and thinly slice 1 onion!. Sautee onion, add 1 clove minced garlic, then pepper and mushrooms!. Cook till shrooms are done and peppers are tender but not mushy!. Whip up a batch of veg gravy (2 c!. veg boullion, 2 1/2 T soy sauce or tamari, 1/2 t!. dried thyme, pepper, cook till boiling!. Add 2 T cornstarch, dissolved in 3 T water!. Whisk about 1 min!.--don't let it boil!. add 1/4 cup soy or regular milk, or more to taste!. Adjust seasonings)!. Add gravy to shrooms and peppers, serve over wide noodles!.
