You should know that a lot of soy cheese contains milk products!. Unless a faux cheese is labeled as "vegan" you can assume it contains a milk product, such as casein!.

My favorite brand of vegan cheese is Follow Your Heart Vegan Gourmet; the mozzarella is excellent and melts wonderfully on pizza!. It is available at a lot of grocery chains and food co-ops!.

A great vegan cheese product that melts wonderfully is Teese!. It can be ordered online and many stores carry it, info here: http://www!.teesecheese!.com/where_to_buy!.!.!.!.

If you miss the gourmet cheeses like blue, gouda, and smoked cheddar you should try Sheese!. It can be ordered here: http://www!.buteisland!.com/

You can also make cheese substitutes!. Look into buying The Uncheese Cookbook: http://www!.amazon!.com/Ultimate-Uncheese-!.!.!. The book has tons of vegan cheeses that are easy to make including blocked cheeses like cheddar and pepper jack that slice great for sandwiches, cheesy sauces for macaroni and melty cheeses for pizza!. Before you buy this book you can see a [bad] tutorial to make the cheddar on YouTube here: http://www!.youtube!.com/watch!?v=I3FYduSF-!.!.!.

If you like baked macaroni and cheese, my favorite recipe is here: http://allrecipes!.com/Recipe/Vegan-Mac-a!.!.!. You can substitute soy milk for the water to add more protein!. Another recipe that is more like Kraft, a cheesy sauce over noodles, is here: http://blog!.fatfreevegan!.com/2007/10/eas!.!.!. For an actual box of mac and cheese, never fear! Mac and chreese is here: http://store!.foodfightgrocery!.com/roendo!.!.!.

As a sidenote, Food Fight Grocery is an excellent source for all your vegan grocery needs!. They carry all the necessary items like faux cheese, baked treats, candy, chocolate, and junk food!.

While we're talking non-dairy recipes, you can also make your own vegan ice cream: http://www!.amazon!.com/Vice-Cream-Sinfull!.!.!.

Right now is the perfect time for you to start experimenting with faux cheese!. You have been so long without real cheese that the substitutions will still be quite satisfying!. If you do decide to start eating dairy products again, do so slowly!. Your body will need time to adjust to the reintroduction of dairy!. Happy eating!Www@FoodAQ@Com

I hear you- I hate soy cheese, and sometimes I do miss the real thing- but my heart won't let me do it!.

So, here are my solutions!. Amy's makes an awesome cheese free (totally vegan) pizza- you won't miss the cheese, really (I have found it both in health food stores and regular markets in the frozen foods)!.

When I want Mexican (and being from Southern California, that's pretty often), I make my vegan version of enchiladas or tacos or whatever, then compensate for the missing cheese with avocado and soy sour cream!.

I have never liked mac n cheese, so I can't help you there, but I know there are a lot of recipes for the vegan version out there!.

Many vegan and non-dairy cheeses taste horrible!. But they're definitely improving!. I've seen a wide variety of non-dairy cheese in my travels-- even some made with nuts and no soy!. Try searching for and asking vegans on social networking sites like Myspace to ask what their favorite vegan cheeses are!. Or search online for people's favorite vegan cheese recipes!.

I'm vegan, but I don't use a lot of those cheese products!. I don't miss the cheese either-- especially when I think of the process behind making it!.!. and the ingredients!. Many cheeses contain rennet, which comes from the membrane of a dead calf's stomach!.

I've read that cannibals often miss the taste of human flesh too!. If you're ever around a former cannibal and they start to salivate, run!Www@FoodAQ@Com

If you go to the organic section of your grocery store, many of them will have a section with soy-cheese and many other kinds of veggie cheese!. Soy milk, rice milk, and almond milk are also good options!. Just check around for vegetarian options and you'll most likely find what you are looking for!.Www@FoodAQ@Com

Duuude!. Not everyone makes cheese with cruelty!. We have a group of nuns in our area that make a wonderful Gouda using humane techniques!. The cows get to eat grass, the calves are raised into cows!.

Plus, their cheese doesn't have fake stuff in it!. You can't imagine the difference in taste!. Look around in your area, there are groups who make products with a conscience!.Www@FoodAQ@Com

You probably miss cheese because it contains trace amounts of morphine!.
