For a main entree:
Meatless roast
Combine chopped potatoes, celery, carrots, onions and preferred seasonings (and other vegetables if you'd like) in a steamer bag and cook at 350-375 F or until the vegetables begin to soften or brown!.
Vegan corn dogs
4 vegan "not dogs"
1/2 cup unbleached flour
1 tablespoon corn meal
1 tablespoon oil (any)
1/2-1 teaspoon sugar (unrefined)
1 teaspoon baking powder
water (until dough formed)
Mix all ingredients except for the "not dogs" until it is in a dough ball!. Next cut the "not dogs" in half!. Roll the dough out as thin as you would a tortilla and wrap the dough around your "not dogs"!. Bake at 375 F 12-15 minutes or until golden!.
Lasagna
1 32 oz jar pasta sauce (more if preferred)
12 lasagna noodles, uncooked
1 10oz pkg Mozzarella cheese (Follow Your Heart Vegan Gourmet), shredded
1 10oz pkg cheddar cheese (Follow Your Heart Vegan Gourmet), shredded
2 Italian sausages (Tofurkey, 3!.5 oz each), sliced thinly
Preheat oven to 375 degrees!. Combine the shredded mozzarella and cheddar cheeses together!. Spread a thin layer of pasta sauce along the bottom of a 9” x 13” baking dish!. Cover bottom of dish with 1 layer of lasagna noodles and spread a thin layer of pasta sauce over the noodles!. ?Distribute 1/2 of the sliced sausage over the sauce!. ?Spread 1/3 of the cheese mixture evenly over the noodles, sauce and sausage!. Repeat previous step!. Finish with a layer of lasagna noodles and the remaining pasta sauce, ensuring that all noodles are covered in sauce!. ?Top with remaining 1/3 cheese mixture!. Cover and bake at 375 degrees for 45-50 minutes!. ?Remove cover and bake on broil about 5 minutes, until cheese is lightly browned and bubbly!.
