Sigh!.!.!. this is a hard question! If you're vegan, it's easy: bagel; if you're gluten-free, it's easy: eggs!. When you're vegan *and* gluten-free (like me): AAAAH!

Smoothies are always a winner: Frozen fruit, a banana, maybe a little protein or energy powder, some hemp milk or soy milk - throw it all in the blender and there's breakfast! Add a bit of honey or agave nectar if you like things super sweet!. The nice thing about this option is you can mix it up, have different flavors every day!. Banana and cinnamon, coffee and cocoa, strawberries and orange juice, etc!.

I make these blue corn muffins (http://glutenfreegoddess!.blogspot!.com/20!.!.!. in advance and freeze them, and then defrost them a few at a time and heat them up in the toaster oven and spread with some Earth Balance!. Takes a little advance work, but it's very satisfying and quick in the morning!

I don't know if you have a Trader Joe's where you are, but I just tried their new Gluten-Free Pancake Mix and I loved it! We made it with Ener-G egg replacer instead of eggs and it came out great!. Here's a description of what they're like: http://inmybox!.wordpress!.com/2008/11/11/!.!.!.

Honestly, I eat a lot of leftovers for breakfast!. Leftover rice and veggies makes a pretty tasty breakfast, as does leftover casserole or things like that!. It's tough to find dedicated "breakfast" items that meet all our needs! Www@FoodAQ@Com

-Oatmeal, Quinoa, or Couscous made with nuts and dried fruit
-Cornflakes with soymilk and a chopped banana
-Tofu scrambled with various veggies
