What are some good, easy vegan recipes to try?!
I've got some vegan friends coming over in a few days and would love to have some vegan dishes they can eat!. I've never cooked vegan food before so please, something fast, easy and very simple!.
PS-I'm not interesting in converting to a full time vegan, I already know the benefits!. I'm not interested in joining PETA, and I'm not a PETA freak even though I believe in animal rights!. I just want some simple, easy to make vegan food!.Www@FoodAQ@Com

Here is my favorite easy vegan recipe!.
Curried Lentils
adapted from: Many Hands Cookbook by the Yellowknife Guild of Arts 'n Craft
2 c dried lentils
5 c water
4 vegetable bouillon cubes (or omit, use veg stock in place of water and add a little more salt to the recipe)
2 bay leaves
2 tbsp olive oil (or butter)
2 large onions, diced
2 cloves garlic, minced
2 tbsp curry powder
1-2 tsp salt
1/4 cup lemon juice
chopped parsley
Stove top Method:
Bring lentils, water, bouillon cubes and bay leaves to boil!. Simmer 20 minutes!.
Sauté onion and garlic in olive oil!. Add curry powder and salt and fry briefly!. Add this mixture to lentils along with lemon juice and parsley!.
Serve over brown rice with extra parsley on top for garnish!. It goes well with steamed greens as a side dish!.
Crock pot Method:
Sauté onion and garlic in olive oil!. Add curry powder and salt and fry briefly!. Dump this mixture along with everything else into a crockpot and cook on low for 8-10 hours or high for 4-6 hours!.
Serve over brown rice with extra parsley on top for garnish!. It goes well with steamed greens as a side dish!.Www@FoodAQ@Com
