Make sure you have lots of herbs, spices and seasoning in your storecupboard!. That way you wont short of ideas as the same ingredients will taste completely different if you vary the seasoning!.

For example Thai Stir Fry Mix is good, lemon pepper is delicious, curry powders will transform most dishes and there are lots of variants like Jalfrezi, Rogan Josh, tikka masala!.

Then there are the subtle moroccan (warming rather than hot)seasonings spices like baharat and ras-el-hanout!. Chinese, mexican (fajitas!) and so on!.

I don't know what country you're in but if you're in the U!.K!. there are plenty of options:
Holland and Barrats do a great range of veggie food!. Good brands are Realeat or Frys!. There are hot dogs, sausages, polony, pate, fish fingers and alternatives to just about every meat product you can think of available!.
You can also be creative!. Get veggie mince and make a Shepherds pie - just substitute the mince!. Buy veggie sausages and make toad in the hold using Yorkshire pudding, Bisto gravy and onions!. Make pasta dishes using a range of vegetables!. You can use mushrooms and soya cream to make a great sauce with a little garlic and black pepper!.
Another great source of veggie food is a Chinese supermarket!. There are a whole range of veggie products you can try which are aimed towards the Chinese Buddhist community who don't eat meat!. Tins of meat alternatives are available called Lo Han Chai (also available in some Tescos), Chai Charang and Mock Duck (also available in Holland and Barrats) or mock chicken/ pork/ abalone etc!. There are many great sauces - sweet and sour, black bean, lemon, Szechuan!.!.!.take a look (many available in big supermarkets)!. A quick meal is rice noodles (2 mins to cook) a tin of mock duck - fry red onion and red chilli, add a tablespoon of soy sauce, a tablespoon of sweet chilli sauce and a table spoon of honey!. Simmer ingredients together!. Add the mock duck and brown the surfaces letting the sauce thicken!.
Buy some filo pastry!. Chop up a bag of spinach, 3 spring onions, add a small block of feta cheese!. Sprinkle a little salt and pepper and combine!. Lay out the filo pastry put two spoonsfull of the spinach/ feta mix in one corner!. fold and seal, and fold again twice until you have a compact triangle!. Repeat 5 times!. Bake until golden - you have spanikopita or Greek spinach pies!.
Roll out a sheet of puff pastry!. Peel a red onion and caramilise in a frying pan with some brown sugar or honey!. Spread the onions over the pastry and then crumble feta (or another cheese) over it!. Bake for around 20 minutes!.
Vegetarian sushi is great too - avocado, inari, pickled radish, tofu or vegetable versions can be bought in various places from the Japan Centre in Piccadilly to Pret a Manger and M & S!.
There's loads of choice if you're a veggie!. It isn't all boiled beans and tofu!. I have to be veggie as I'm allergic to meat so I've learned to be creative!. Hope this helps!Www@FoodAQ@Com

There's a restaurant in Boulder, Colorado that is amazing and even if you don't go there, the menu provides some delicious (and sometimes fancy) ideas!.

For example, their Mediterranean Plate has artichokes, baba ganoush, fresh mozzarella, olives, sundried tomato tapenade, and a housemade pita!. Yum!

roasted mushrooms (tastes professional)

4 large portabella mushrooms
1/2 cup olive oil
1 teaspoon black pepper
3 tablespoon soy sauce
1 tablespoon balsamic vinegar

mix liquids
rub liquids on sliced mushrooms
prehead oven to 400

bake mushrooms for 6 to 12 minutes
after 6 minutes touch the mushrooms they should be soft
