I am a former chef and will give more information than just what some would, I make an eggplant parmesan like dish, with tofu, cutting it into slice length wise, and brown it in a pan, you can use some breadcrumbs to add a crust, then top with a bottled organic tomato or spaghetti sauce, either real cheese or soya cheese like mozzarella!. I then bake it in the oven for 25-30 minutes to brown or melt the cheese, you can add other veg like mushrooms zucchini and what even you like, even make a veggie shepard pie with TVP and veg, and mash some silken tofu into the potato topping for extra protein, I have found since becoming a lacto-ovo, vegetarian that as I was a chef for 20+ yrs and have been able to add and adapt alot of recipes to a tofu, TVp or seitan dish with very few problems, alot depends on your tolerance and like of tofu as to how they work out for you!.

As for the type for most I would use firm or extra firm, you can use the medium and soft/silken also for desserts, I have and if you want more ideas let me know!.Www@FoodAQ@Com
