Bored with my vegan diet - how can I spice it up?!

Question: Bored with my vegan diet - how can I spice it up!?
Hi everyone :) I've been a vegan for about 5 months now, and I'm starting to get bored of the foods I've been eating!. Don't get me wrong, I absolutely love being a vegan, it's just that I've been eating the same foods for 5 months now!. For breakfast it's always cereal, fruit or vegan pancakes!. For lunch it's always PB&J, soy hot dog, or a salad!. For dinner it's always a veggie burger or pasta!. It's so boring!

My question to you guys is this: what can I eat that is easy to make (I mean REALLY easy) and that tastes freakin' delicious!?

All comments are welcome, except for rude ones!. Thank you :)Www@FoodAQ@Com

Answers:
Have some fun with your vegetables and fruits!. Start trying new recipes, cook brown rice with tofu and vegetables and use teriyaki sauce over it, use different egg replacers for your pancakes or muffins such as bananas!. Eat hummus and pita bread or spread soy cheese over a plate of nachos and add peppers or vegan sour cream!.

Just enjoy your diet, don't be afraid to try something new, the worst that can happen is you don't like it!.Www@FoodAQ@Com

You don't need to make a feast out of every meal!. Start with fruit for breakfast, that is usually enough for me!.
Have plenty of fresh juices, fruit or vegetable throughout the day!. These are great energy boosters and they'll fill you up!.
Have you tried rice with pasta sauce for a change!? Very easy to make and tasty!.
Salads can be made with olive oil, grated ginger, garlic, fresh corn!.!.just cut them off the cob!.!.!.you know like slice them off, spring onion, add your veggies and you can even put in some apple pieces!.!.adds sweetness to the salad!.

There's a lot more that I can tell you but it's just improvising!.

P!.S I never eat pancakes and that "normal" type of vegan diet!. I try to keep it as raw and tasty as possible!.Www@FoodAQ@Com

This is easy because you just dump things in the pan and stir!. And it's freakin' delicious!.

Curried Chickpeas

1 15-ounce can chickpeas, drained

about 1/2 cup golden raisins

1 chopped red bell pepper (optional)

4 level Tablespoons whole wheat flour

1 10-ounce can (approximately) of chopped stewed tomatoes with liquid!.

1/2 cup canned coconut milk (regular, not lite)

3-4 level Tablespoons curry powder

1 teaspoon cumin
1 teaspoon ginger

1 teaspoon garlic powder optional
1 teaspoon basil optional

water

plus cooked rice OR toasted pita bread

In big frying pan mix coconut milk throroughly with flour until mixture is smooth!.

Add tomatoes and liquid from can and stir!.

Turn heat to low-medium and stir!. Add a little water if needed!.

Add cumin, curry powder and ginger (garlic powder, basil)

Thin with water for soupier consistency!. (not more coconut milk)

Stir for a few minutes to cook flour!.

Add chickpeas and golden raisins (bell pepper) and stir gently!.

Heat through and serve on rice or toasted pita bread!.

This recipe can be adjusted many ways and still taste good!. You can use about 2 tablespoons tomato paste instead of chopped tomatoes also!. You can double the ginger!. The unused portion of coconut milk can go in the freezer!. If no raisins, add a little sugar, since the raisins add sweetness!. Sorry about so many new spices that are expensive but they keep and they're good for you too!.Www@FoodAQ@Com

So important is one's diet that one should wonder why schools do not teach the dietary and nutrional science subjects to be required learning in K through 12 and well into university level!.!.!.

We just don't know, is all!.

I find that I wish to take a culinary course, 'cause I need to be a better cook, being a single man!.!.!.and the course(s) would teach the preparations of raw, baked, roasted foods, and the vegetable and fruit juices!. It's just that important!.

America simply has not gotten round to it!.!.!.being a meat-eating, artifice-dependent nation!. Our palates are bred to like junk and jad!.

Having once been a vegetarian, I realize that vegans, too, have to be sure what they are doing, for there is that probability one may undergo nutrition deficiencies, in particular in that of the different proteins needed and the B vitamins!. And of course minerals are always important because even industrial-bred vegetables lack important minerals -- so denuded are the soils in which the plants are grown!.

That said, one does well to meet those who not only sustain on vegan and vegetarian diets but also know how to prepare assortments for enjoyment!. These types of folks are increasing nationwide now, and so learning to spice up your diet is not so far fetched from enjoying now!.Www@FoodAQ@Com

Really simple and easy:
Beans and Rice (I always have a big container of rice in the refrigerator for use during the week)

1 can of beans (pinto, black, red, or even gabanzo)
1 jar of salsa
some rice and cilantro/green pepper/jalapeno pepper/something green

Drain the can of beans (if you want you can have more than 1 can-I like to use a wide range of colors so I use all four but it is alot of rice and beans!) and heat it up!. Add the salsa next and heat up!. Then throw in the rice and stir it all up!. Throw whatever else you like (the green stuff) and salt/pepper to taste!. Very fast and easy!.Www@FoodAQ@Com
