Ener-G Egg Replacer!. It works well in most recipes!. An adjustment may be needed to help body and volume- adding a tablespoon of starch like tapioca, or applesauce helps!. For more creaminess, add a tablespoon of fat as well (yolks have fat, after all)!.
1 tablespoon tapioca plus 3 tablespoons water for each egg
Flax seed is a choice for those not allergic to flax seeds!. Use two tablespoons ground flax meal plus 1/8 teaspoon baking powder blended with 3 tablespoons of water for each egg called for in recipe!.
Banana: Try a half mashed ripe banana plus 1/4 teaspoon baking powder for each egg!.
Mayo: Use 3 tablespoons vegan mayonnaise in place of one egg, for binding!. I would add a little extra leavening- 1/4 teaspoon baking powder!.
Tofu: If not soy intolerant, try using 1/4 cup silken tofu for one egg for binding; I would add a little extra leavening- 1/4 teaspoon baking powder!.
Not vegan: Dissolve 1 tablespoon unflavored gelatin in 1 tablespoon cold water; add 2 tablespoons boiling water!. Beat vigorously until frothy!. I would also add a little extra leavening- 1/4 teaspoon baking powder!.Www@FoodAQ@Com

Egg Substitutes
* 2 tbsp cornstarch = 1 egg
* 2 tbsp arrowroot flour = 1 egg
* 2 tbsp potato starch = 1 egg
* 1 heaping tbsp soy powder + 2 tbsp water = 1 egg
* 1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg!.
* 1 banana = 1 egg in cakes!.
* 1 tbsp milled flax seed and 3 tbsp water = 1 egg!. Light, fluffy cakes!
* 1/4 cup applesauce = 1 egg
I probably wouldn't use the banana or the applesauce for these types of cookies, and I might use the flaxseed in the gingerbread but not in the sugar cookies, but the other substitutes should work well!.Www@FoodAQ@Com

I would normally use a tablespoon of treacle (molasses!?) or golden syrup or honey or malt extract per recipe-egg!. And they always turn out great!. This also means you can cut back on the amount of sugar that the recipe calls for!.Www@FoodAQ@Com
I don't know about those types of cookies, but I've made oatmeal and a few other types of cookies with that Ener-G Egg Replacer, and it worked great!.Www@FoodAQ@Com
i always use ground flax seeds in water:
