Question: I need vegetarian recipes/meal ideas WITHOUT any of these ingrediants!?
My mom wants to become a vegetarian like me (YAY) but she has a chronic illness that limits what she can eat!. She CAN'T eat: soy (which includes tofu!!) tomatoes, apples, RAW onions, any citrus (unless it's just a tiny bit), cranberries and basically anything acidic!.
What are some good recipes/meal ideas that are vegetarian and don't contain any of those ingrediants!?Www@FoodAQ@Com

Anything that calls for a small amount of soy sauce, you can omit it but add a dash of salt!. If it calls for vegan chicken or beef flavored bouillon, make sure that when purchasing it that it does not contain soy ingredients!.Www@FoodAQ@Com

Cheese tortelini, veggies, olive oil/garlic sauce!.
White bean soup with kale or other italian greens
Veggie quiche
Vegetarian pea or lentil soup
Frozen potato pierogi!. Great served with peas or lima beans!.
Rice and beans from various ethnic origins!.
Stuffed acorn squash!.
Portobello mushrooms stuffed with spinach and cheese
Spinach ricotta pie
Roasted chick peas (garbanzo beans)
Hummus and pita bread


Some frozen veggie burgers do not contain soy!. I think the grain-based garden burgers might be soy free (check the label)!.Www@FoodAQ@Com

you could try stuffed mushrooms -i make them by frying off onions and garlic and mixing with soft cheese, paprika, mixed herbs and breadcrumbs and using the mix to stuff a large mushroom and bake in the oven for 40 mins,

I know this has onions but from what I understand from your question cooked onions are ok!?

You could also try stuffed peppers (im not sure how acidic these are though sorry) - in this case i'd use rice or cous cous instead of cheese (as above)Www@FoodAQ@Com

You'll have to use your head! Think about substituting beans or other legumes in recipes!. Add things she likes to substitute for those acidic foods!. Pears in place of apples or carrots and celery instead of tomatoes!. You'll have a hard time finding recipes that don't use those ingredients!.Www@FoodAQ@Com

so she has acid reflux!? my friend has that, cant eat spicy foods either!.!.!.
but salad, fruits, stir fry, grilled cheese, sandwiches, loads of things!. Im a vegan, and there are still plenty of things and I have loads of alergies :SWww@FoodAQ@Com
