(Vegetarian) What should I??!


Question: (Vegetarian) What should I!?!?
What should I eat fro dinner!?!.!.!.I need some ideas, I'm a ovo-lacto vegetarian, I want some easy ideas though because I'm a little limited & I'm kinda tired of salad!.!.ha ha!.

So far to day this is what I ate!.!.!.

Breakfast :
1 apple - 80 Cal's!.
1 orange - 60 Cal's!.

Lunch :
Coffee - 5 Cal's!.
Coffee mate - 20 Cal's!.
1/2 cup Fat free skim milk - 40 Cal's!.
1 serving cheerios - 100 Cal's!.

Total calories so far - 305!.

Go get morning star dinners in the frozen sections of your grocery store! They have things like hamburgers, hot dogs, chicken nuggets, etc, they aren't real meat its all make out of vegetable protein!. They are really tasty and healthy too!Www@FoodAQ@Com

considering that you need to ingest at least 1,200 more calories to not make your metabolism come to a screeching halt it had better be a lot of food!. the average 2 year old consumes more calories than you!. you will pay for it later in life!.Www@FoodAQ@Com

That's nothing girl!. You need to eat more then that!. Try adding some beans and nuts to your diet!. Cheese and pastas are also a great idea!. Make a nice pasta with eggplant and homemade garlic bread!.Www@FoodAQ@Com

My 14 year old is also ovo-lacto vegetarian!. I look up all sorts of recipes on various sites that have plenty of things to make and eat!. And even if they are not really vegitarian, you can always omit the meats and use a tofu type of product!.

I keep stocked for her always:
frozen veggie lasagna
various frozen vegetables
home made pasta sauce
veggie egg rolls
tofu products like bacon, ground beef, extra firm tofu blocks and hot dogs or brats!.
Whole grain breads
differnt spreads like natural peanut butter, jams, jellies and soft polenta

on a day like today i can whip up a pasta, toss in a mix of frozen veggies like peas, carrots, onions, mushrooms and once cooked, stir in some pasta sauce (meatless of course) or if she is not in the mood, then drizzle a little olive oil over top and sprinkly w/greated cheese!.

another day to change things up i will make jambalaya - Zataran's Jambalaya does not contain beef or chicken stock in its seasoning mix, so it's ok to use!. I cook the rice by the box directions and in a pan i chop up some onions, potatoes and a couple of brats or hot dogs (tofu of course), splash some worstershire sauce as the cook up, the toss the rice and brats/hot dogs in a bowl and you have jambalaya on the easy!

one of her favorites is vegitarian chili:
one block of extra firm tofu
1/2 cup homely
1/2 cup corn kernels
1/2 cup chopped onions
1 can of stewed chopped tomatoes
1 can of red beans - make sure they don't have beef/chicken broth
1 chopped green bell pepper
1 chili kit by Caroll Shelby - great stuff

i great the extra firm tofu and pan fry it in some oil until most of it is brown and crunchy!.

follow the directions on the chili kit omitting the ground beef with the tofu and you have a great bowl of chili!.

She gets board of salads also but if you add stuff to yours then you get a new one all the time - for example:

mix in some slivered almonds, crumbled blue cheese, chopped pears and a rassberry vinagret for a really good salad!.

or go mexican by adding some shreaded mexican blend cheese, some corn, black beans, chopped onions and green peppers and some oil and lime juice (instead of vinegar)

Another that i like is - i know it sounds weird but it is oddly good:
chocolate covered almonds (yes that's right), dried cranberries, strawberries and rasseberry vinagret!. I call it my "lovers salad"Www@FoodAQ@Com
