I am a former chef and a vegetarian now and to correct the one person, not all cheeses have rennet, some are soured with acids like ricotta, some with an enzyme, and in the UK some are made with a vegetable rennet made with the Stinging Nettle plants, there are numerous cheese made all over the world made without rennet, soya cheese is not it is a soya milk product with emulsifiers, but common cheddar, mozzarella and others commercially made, Velveeta is a blend of cheese, butter oils, milk ingredients and and thickeners!.Www@FoodAQ@Com

All real cheese has rennet in it!. Perhaps processed cheese like Velveeta or "American cheese" doesn't!.Www@FoodAQ@Com

Rennet is added to milk to make cheese curds!.
