Yes they do eat bread made with yeast!.
Yeast is not classified as a living animal!.
Up until the 1970's ( very recent in kingdom classification terms ) the jury was out!. Now its very clear yeast is closely related to the fungi family of plants!.
"Yeasts ( eukaryotic microorganisms ) are classified in the Fungi kingdom ", from my rather well researched and accepted definitive book on yeast!.
The things a vegan would look out for in bread are milk, butter and what the pans are greased with!.

Unleavened bread!. Being a vegan means that you don't eat or use any products that come from an animal!. That includes meats (including fish and seafood), eggs, dairy products (including casein and whey), honey, gelatin, and everything that has an animal derived product as an ingredient!. Vegans also don't use products that have been tested on animals or use animal ingredients!. They don't wear leather, fur, or wool!.
In my opinion, it's very difficult to become vegan at first because you could drive yourself crazy reading labels!. You'd be surprised, for instance, how many foods contain gelatin or whey or fish sauce!. If you have a co-op in your area, you will have more foods to choose from and you can get to know certain brands of food you can trust to be vegan!.

Just wanted to back up what Michael H says!. He's absolutely right!. Although Yeast is an organism, it is not sentient, it has no intelligence and can feel no pain!. I'm a vegan and make my own bread regularly!. I find olive oil gets the best results!. I also make a vegan version of Irish wheaten bread, lovely!

Veganism isn't about not eating living things!. Plants are living things, and I eat plenty of them!. Yeast is a fungus, so eating leavened bread is comparable with eating a mushroom!.Www@FoodAQ@Com
