Try making your regular recipes but substituting ground meat for other things !.!.!. a mix of lentils, beans, mushrooms, rice, chopped onion, shredded carrot, some egg to use as a binder !.!.!. this can be used to stuff vegetables like eggplant, bell peppers, tomatoes, cabbage leaves!. You can also form meatballs out of it and cook it in a pasta sauce!. Just don't eat over regular pasta, it has wheat in it!. You could also make "hamburger" patties out of them!. Falafel is also good!. For both those ideas, you don't even have to make at home, you can buy mixes in a regular grocery store!. Fantastic foods has a very nice veggie burger mix!. If you still eat fish, you can also go with the classic 1 serving of fish + 2 veggie sides!. Some sides could be mashed potatoes (made with oil or earth balance spread if you want to avoid butter), fennel or other veggies roasted in oil, rice, sauteed spinach!. But I'm sure you don't want that every night!. You could even make a soup with veggies and fish in it, or just veggies!. Another idea is to use "normal" foods from different grains!. Make a spicy mexican casserole with a base of corn bread (you don't need milk to make it, you can use soy) and spiced beans and tomatoes on top!. Or burritos/fajitas with corn tortillas, sauteed onion and pepper, veg!. refried beans!. Make a lasagna with slices of zucchini and eggplant instead of noodles on the week you want to avoid wheat, and on the week you don't want dairy just leave out the riccota and beef, substitute it for a mix of spinach and mushrooms and finely chopped tofu!. Just some ideas!. Good Luck!Www@FoodAQ@Com
