Vegetarian looking for yummy easy recipes ?!


Question: Vegetarian looking for yummy easy recipes !?
I have to cook every meal for my parents who are not vegetarians, and most are so time consuming that I usually have to resort to frozen entrees!. I'm getting very tired of eating so much processed food, some entrees I make them I can of course substitute the meat for tofu, but not all recipes work the same for tofu as they do the meat that was intended!.

As a side note, I've checked the ppk, peta, and searched for recipes, I'd just like to get suggestions from other busy vegetarians!Www@FoodAQ@Com

Some of my easy and fast meals are!.!.!.

- Spaghetti with tomato sauce (can always add veggie crumbles or white beans for protein if you want)!. You can make this in the time it takes to boil the water!. I microwave the sauce while the pasta cooks!.

- Tacos - Heat up re-fried beans and buy pre-shredded cheese and lettuce!. Add salsa, sour cream or avocado!. Instead of beans I microwave sometimes veggie crumbles and stir in taco seasoning!.

- Microwave a potato (instead of baking, much quicker) or bake it while you do other things and top with a can of veggie chili or broccoli and cheese!.

- Quesadillas are easy!. Just place toppings such as cheese inside a tortilla and heat in a pan until golden on both sides!.

- Gourmet grilled cheese - get creative with your fillings

- Salad - buy the prewashed greens and just add all sorts of toppings

- Crockpot meal: takes only a few minutes to put together and cooks while you are away! Here are two recipes I have used:

I don't know what your definition of easy is, but there's a great one on the food network website called "roasted vegetables with penne pasta!." it's from the tv show everyday italian!. i make it all the time and basically you just roast a bunch of veggies for 15 minutes and then put them in a casserole dish with marinara sauce, cheese and penne pasta and bake it!. it's sorta time consuming chopping the veggies, but other than that it's very easy!.Www@FoodAQ@Com

dice avacado & cheese, mix them together, boil some eggs!. cut the eggs in half and put the cheese and the avacado in them!. add some salt and some lemon!. tofu if you want!. yummm:)Www@FoodAQ@Com

Vegetarian lasagne!.

Zucchini and pumpkin frittata!. This one is really easy!.

Vegetable stir fry with Hokkien noodles!.
Stir fry your favourite vegies in batches (dont forget the onion and garlic for flavour), Stir fry some tofu too if you like that and return everything to the wok and then throw in some hokkien noodles that have been softened in hot water!. Add a few tablespoons of oyster sauce and mix through!. If you want more sauce add a few tablespoons of either water or chicken stock!. Serve with rice!. yummy!.

Pasta with pesto!.
Sometimes when your in a hurry pasta with simple pesto mixed through and topped with parmesan cheese is very tasty!. You can make your own pesto which only takes a couple of minutes (the homemade stuff with last for about a week in a sealed jar in the fridge) or you can buy it pre made some are good and some are not!. Im not sure where you are but sacla is a good pre made pesto!.

Veggie Pasta Bake is easy and nice too!.
