I have eaten artichokes all my life, and the BEST ones are the larger, round, relatively tight, heavy ones that "squeak" when you squeeze them!. Sounds weird but that's my true test!. If I am really craving artichokes and all I see are smaller, "spiky" looking ones, it still comes down to the squeak!. When artichokes become stale or softer, it eliminates the "squeak factor," LOL!.Www@FoodAQ@Com
They should be heavier than they look!. The tips turn dark but avoid those with long dark streaks on the outer leaves!.
The best ones have part of the stem still on!. The stem can be peeled and eaten, as it is solid flesh!.Www@FoodAQ@Com
