Are you a vegan? ?!
Just wondering if you know of any quick, simple vegan recipes that I could possible have!. I just recently went vegan after being vegetarian for 4 years, and I have to change my whole diet, as I'm trying to avoid animal products (eggs, milk, etc!.)!. Anything would be really helpful!. Cheesy Lasagna
2-3 jars of favorite spaghetti sauce
1-16 oz bag of spinach leaves
2-3 jars of tomato sauce
1/2 lb!. carrots
1/4 cup chopped fresh parsley
2 cloves minced garlic
1/4 cup canned low-sodium veggie broth
1 lb!. herbed tofu
8 oz!. vegan cream cheese
2 Tblspns!. lemon juice
1/8 teaspoon nutmeg
12 lasagna noodles, cooked
1/4 cup nutritional yeast, optional
Directions:
Slice carrots and steam, set aside!. Add olive oil to a large skillet, place over medium-high heat until hot!. Add parsley and garlic, saute for 1 minute!.!. Add carrots and veggie broth; simmer uncovered for 5 min!. Add herbed tofu, vegan cream cheese, and lemon juice; stir well!. Cook over medium heat stirring constantly until fake cheesy stuff starts to melt!.Stir in nutmeg (possibly you could add some about 1/4 C!. nutritional yeast at this step, just to make it a little bit more cheesy!)!. Remove from heat; keep warm!.
Place 3 lasagna noodles in bottom of 11x7 baking dish!. spread carrot mixture over top, place 3 noodles on top of that and spread tomato sauce and spinach on top of those, repeat process until all noodles are used up!.!.!. top with spaghetti sauce!. Cover and bake 15 min!. at 375 degrees!. Uncover and bake an additional 20-30 min!. until it is thoroughly heated!.!.!. use your own judgment!. Usually a lasagna takes about 45 minutes to cook thoroughly!. this is the best lasagna i have ever made or had, or non-vegan!.!.!. it is superb!.!.!. your non-vegan friends will be wowed!!!!!!!

Microwave Brownies
1 banana, mashed
3/4 cup sugar
1/4 cup olive oil
1 teaspoon vanilla
1 cup flour
4 tablespoons cocoa
1/2 teaspoon salt
chocolate chips
Directions:
Mix wet ingredients in a bowl!.!.!.add dry ingredients!.!.!.!. mix everything together well and put in a small microwavable safe dish that's been greased up with cooking spray!.
Sprinkle with chocolate chips and microwave on high for 4-5 minutes (depending on how gooey you like em)!. Great for late night studying Snacks!. You could probably even add some instant coffee to them before you cook them!. lol
Veggie Sushi
1 cup rice (white)
1/4 cup rice vinegar (amount to your taste)
1/4 cup sugar (amount to your taste)
2 teaspoon salt (amount to your taste)
Nori (seaweed in dry, rectangular, paper thin form)
soy sauce (to taste)
Wasabi (powdered horseradish)
Vegetables (optional- see procedure)
Directions:
Cook the rice!. If you know how to cook rice, that's great!. If not, the package usually will tell you!. (Note- this recipe is based on 1 cup UNCOOKED rice, which will be considerably more when cooked)
Mix vinegar, vegan sugar and salt in separate bowl (a soup bowl will do)!. Mix into the cooked rice!. Buy little rectangles of nori (seaweed) and wrap the rice with the nori!. Dip in sauce made by mixing soy sauce and wasabi (to taste)
You can also wrap up vegetables with the rice!. Avocado, cooked asparagus, cucumber, thin carrot slices, and ginger taste good with this!.
These ingredients can all be found at an Asian food store!.

1 cup soy milk
1/2 applesauce
rainbow sprinkles(optional) :D
also baked potatoes are pretty easy(i like sweet potatoes) all you do is microwave it for lik 6 minutes and add some vegan margarine!.
cooking some couscous is really easy too all you do is boil 1 to 1 ratio of water to couscous, so you boil the water than add couscous and take it off the burner and let it just soak up!. then stir fry your favorite veggies with some soy sauce!.
pb&j is also a no brainer lunch!.
bagel with hummus and cucumber is also really good!.

2 tbs baking powder
1 tbs vegetable or canola oil
1 teaspoon salt
2 1/2 cups soy milk or water
Mix all ingredients together, don't blend or over mix! They need to be bubbly!. Cook on a pan as normal pancakes!.
They are so good, you can also make them into a dessert with powdered sugar and a 1/2 tbs of vanilla extract!.Www@FoodAQ@Com
