I believe you can use EnerG egg replacer for quiche!? The result won't be the same, but I think there's a recipe on the package!.

You can get it at health food stores like Whole Foods; you can also order it in bulk (2-4 packages at a time) from Amazon, if you can't find it in your area!. It's completely vegan, as far as I'm aware!.
