Oh, tofu is fabulous!
I always eat it with brown rice and fresh vegetables, but they are apparently very nice in a stir-fry!.
They are very healthy!.!.!.!.!.low in fat, and high in protein :)
Just because something is high in calories, does not mean it is unhealthy!.!.!.!.quite the contrary!.

if you fry or grill it, its really good with broccoli in marinara/spaghetti sauce over spaghetti

You can scramble the chunks w/ eggs and season w/ paprika!. Another tofu is silken/soft tofu and you can add them to eggs while you are scrambling them so as to reduce the amount of eggs your consuming but still get the protein!.Www@FoodAQ@Com
I have never had tofu before but can't you substitute it for any kind of meat!? Like cream of tofu or something!? Try frying it with some marinated veggies and brown rice or white if you prefer!.Www@FoodAQ@Com
